    I think a better comparison would have been a choice grade beef rib eye and the bison ribeye. This is a significant fat discrepancy between the prime ribeye and the bison ribeye

    Thanks for posting. I've heard before Bison has a sweeter flavor than beef . I've had a bison burger and thought it was excellent. I found grass fed Irish beef to be great .

    That looks absolutely AMAZING. Only thing missing is ME helping you eat them 🤣. I’m with you, I only season my Steaks 🥩 with Lots of Salt and Fresh Cracked Black Pepper. And cook in my Black Iron Skillet with Butter 🧈. I’ll have to give The Avocado 🥑 Oil next time I cook steaks.

    I'm now salting my steaks an hour plus beforehand, definitely works. Also agree avocado oil is the best I've used. Not tried bison, will have see if I can find some. A good point someone once made, there is a reason we all eat beef, pork, lamb and chicken, our ancestors found they tasted the best! Have you tested grain Vs grass fed beef? We can get grass fed longhorn here, not cheap, aroun £9 for a good thick rib eye steak but very, very nice. I also find great steak always tastes best cooked on a very hot barbeque. Currently using Sekelbos hardwood, cooks very well. Enjoying your work keep it up 👍

    I really like bison and its nutritional profile. One of the comments said buffalo and there is a difference. Buffalo are indigenous to Africa and Asia and Bison is in N and S America. They actually look quite different as well. Canadian Bison is graded A-D, A1 being the highest. Americans do refer to Bison as American Buffalo in any event. I also love Avocado Oil for its high heat point and high monounsaturated fats. I think a choice cut of red meat and bison in two different pans would be more comparable. Love your videos.

    The flavor of the bison and the cow would depend on how the particular rancher finishes the animal before slaughter. Purely grass fed will have a much sweeter flavor profile, and many people aren’t accustomed to that. Grain fed is richer without the sweetness. Since many people prefer the taste profile of grain fed, ranchers who raise their herds primarily on grass will finish them off on grains before slaughter to make the product more marketable. To do a fair taste test you’d need to know the finish and buy two similar products. Also, as has been mentioned, cook them in separate pans.

    Ok but doubtful anyone wants to eat “cow” steak. Technicality. Grade A beef is never cut from a cow carcass, but a well finished steer or heifer “beef”.

    Bison and the domestic cow belong to the same family (Bovidae) and are genetically similar. So it's no surprise they taste exactly the same because I had em before and I honestly couldn't tell the difference. Except bison I think is much more leaner with less fat because most are free roaming eating fresh green grass.

    It's better to cook them in separate skillets, the juices combine kind of "combining" the taste, I'd say redo this lol, (respectfully 😁)

    Try cooking the bison 5 to 7 degrees cooler than the beef and 2 minutes longer than beef. Cooking at a lower and longer gives time for the long buffalo muscles to break sown.

    Bison and buffalo are 2 different animals, and they taste quite different. I have tasted both.

    You owe those steaks a reverse sear. Give it some time on a nice low heat to render the fat. You’ll get a better crust that way too. The spotty browning and the tough white fat in these guys could be improved upon big time!

    I've only had bison one time. It was from one of the best steakhouses in north Louisiana and it tasted like gut shot elk.

    Thanks for the comment and we appreciate the view! It needs to be said that N. Louisiana may not be a great litmus test for bison....like getting crawfish in Montana or "fresh" flounder in Missouri.

    No I think by you dropping the beef in the pan 1st you lowered the temperature of the cast iron I've learned to cook 1 at a time

    No way. If you know the taste of high quality beef, BISON DOSENT TASTE LIKE THAT and especially wild Bison meat. Hard to describe, but Bison has a weird flavor that you know isnt beef no matter how much salt is on it.

    You should salt your meat RIGHT before you cook it so the salt doesn’t draw out all the juices in the meat and you should add LOTS of salt and pepper because you’ll lose 30% of it as you put it in the oil not an hour before any master chef would tell you that

    I raise the #1 best meat on earth #1 by far method #1 by far tame intelligent cooperative dog like breed can be raised indoors. Chicken = world leading meat cuz most dont have acreage& hens can be raised indoors. 3 of (my) hens generate calories of 1 black angus steer in 5 years. (My world champion birds 77.8g ave. eggs) Cows cant bake cake bread & cookies either nor can chicken give milk. I had 40 breeds birds. Jerseys fantastic best chicken I found by far. Egyptian Fayoumis: My 1hen absolutely struck me. So I bred Fayoumi hen with Jersey &result was brilliant = Fayo Giant = worlds best chicken by far. Satans chicken "Standard of Perfection" is... SATANS. CMPLETE LUNACY. His kids ruined chickens. S.O.P deliberately engineered ruin birds u can see this. By just looking@ birds photo. F.G. was born from 1 little Fayoumi hen just had that look. U ever seen alpha Canadian giant wolf from 3' away seperated by nothing but thin air? Well I have they just resonate like sunlight&heat goes right thru u. Fayoumis chicken lived wild 1,000's years till 2day still Egypt. Dont have 2tell u which is new improved chicken photo. Is obvious. These Fayo Giants arent thbest chicken in thworld but rather both thbest chicken in thworld AND raised on a method destroys ancient Wagyu Japanese beef masters. My birds beyond wagyu grade in that my Gen1's generated 1.5 lb fat per bird 5.5 months& lay gigantic eggs thus massive muscular chicks thru diet 50% fatty wild organic grown meats (mostly fresh gutted road kill/pest grade fish. (Catfish 40% fat) = reduced feed cost 60%. *Requires labor harvest/process meat feed bones&all. Wagyu grade beef = 21% fat my birds 30%. Cows: Store bought 5-12% fat grass fed 5 to 7%. I offered 100 locals FREE CHAMPION MEAT BIRD they utterly refused. They said raising chickns doesnt wrk. 10 took them, they all failed @raising them. Only 1person hatched a couple eggs. Do it right or it WONT WORK... I weighed my birds at 4 to 5 months window: My birds 12,000 calories 6months vs 6,000 calories hatchery chicken breeds. My Jersey's lay nearly evry day huge jumbo egg internet calls Jersey's poor egg production. Breed I raise of gigantic chicken is labeled poor meat &egg production in Satans google.
