Ingredients:
65 g softened butter
80 g sugar
1 egg
20 g lemon juice
Zest of 1 lemon
30 g cornstarch
160 g flour
10 g baking powder
Powdered sugar for coating
Instructions:
■ Mix softened butter with sugar, egg, lemon juice, and lemon zest. Unfortunately, I only had half a lemon. For a rich lemon flavor and aroma, you need the zest of a whole lemon.
■ Sift cornstarch and flour, add baking powder, mix. Put the dough in the refrigerator for 1-2 hours.
■ Drop a bit of vegetable oil between your hands for easy shaping of dough balls. Use 1 teaspoon of dough for each cookie, roll the ball in powdered sugar, and place them on a baking sheet, about 5 cm apart.
The cookies significantly increase in size during baking.
■ Bake in a preheated oven at 190 degrees for 13-16 minutes, less time if you want the cookies to be soft inside, more time for a crunchy texture.
■ Allow the baked cookies to cool completely.
