My wife's Birthday was a week ago. I had the idea to make her a cake with everything she loved in it. So I made a Butter cake (yellow cake) and to get fancy I added Ghirardelli chocolate chips to the batter. Rather make a frosting I made a stabilized whip cream and used that. I then put chips on the side and piped a board on the top so I could pour on a thin layer of Ghirardelli 60% cacao dark chocolate ganache. Folks went wild for it. Had a left over slice with some coffee, made the sun shine. Highly recommend stabilized whip cream for those who can't handle a lot of frosting, makes it very light.

@@maripaz8139 you can add gelatin, cream of tartar, pudding, or cornstarch to it! There's videos and recipes for the technique out there

@@mamanain As Rook suggested I added a bit of flavorless gelatin. It makes the whip cream stable in up to 90 degrees!

I work in an office doing a very boring and repetitive job, and your videos get me through the day

I have to laugh at the one “no shells” part. Many years ago, my now 39-year-old daughter bought a cake from a Perkins restaurant using her allowance. We got it home and dug right in, only to find it was filled with egg shells!

I completely agree about using really good chocolate in your baking. It’s worth the extra expense. No Hershey products, no Nestle products. Ghirardelli is mainly what I use these days. We always buy tons of Ghirardelli products when we’re at Walt Disney World!

They usually have the chocolate chips for a good price at Walmart. (60 percent ones are my fav) PS - Aldi has some really good European chocolate for cheep.

I was looking through your videos to find a perfect cake to bake this weekend and I am so glad you posted this!

Allow me to just say that I do not think I have ever seen a cake that looks more decadent. Oh my. My mouth is watering. This looks incredible.

I think I'd use mascarpone with finely chopped dark chocolate for the filling between layers, not a huge fan of cake frosting personally. Thank you for your recipes, always enjoy your content! 💕

I'm not a fan of American buttercream, but what I do instead is add mascarpone to the icing and use less sugar.

You can use his Swiss or Italian meringue buttercream recipes. Stabilized whipped cream would work, too. If I use American buttercream. I tend to do three sticks of butter four cups powered sugar. It’s not sickly sweet. It’s stable enough and gives a smooth surface. That’s even if the recipe calls for 6 or 8 cups sugar.

Since watching Preppy kitchen I switched from nestles chips to Ghiradelli and what a delicious difference. Quality does matter. I am making today the pumpkin chocolate chip cookies. This weekend I am going to tackle the cake.

I too have fibromyalgia, my heart breaks for you because it affects my life in every way and it’s so hard at times, always keep mentally strong I know this helps me and do a lot of what makes YOU happy, which for me is watching John’s videos, isn’t he amazing, makes me smile every time. It’s now 6am (UK) another night up through not sleeping with pain, but at least I’m happy watching John! I’m with NYCbaking - hang in there xxxx
