INGREDIENTS
1 Chicken breast
1 medium size yellow onion
4 toes garlic sliced
2 cups button mushrooms sliced
4 strips bacon
Bacon Grease (fat)
Blackened Steak Magic by Paul Prudhomme
Dried Parsley (sprinkle)
6 slices Provolone cheese
Salt and Pepper
INSTRUCTIONS
Start by preparing the onion. Pull the skin off the onion and cut the ends off. Cut the onion in half and slice it into half rings.
Slice the garlic into thin slices.
Cut the bacon strips in half as well.
In a large skillet, fry down the bacon and reserve the fat leaving just a few tablespoons behind.
Reserve the bacon strips.
Sauté the onions and garlic for two minutes or until the onions start to look brown.
Add in the mushrooms and continue to sauté.
While the mushrooms and onions are browning, butterfly the chicken breast.
Cut the butterflied breasts in half and flatten with a meat tenderizer. It’s only necessary to hit the highest part of the breast to make it even with the thin part.
Season the breast with blackened steak magic and a sprinkle of salt and pepper.
Remove the onion mushroom mix and reserve.
Add a bit of bacon grease back to the skillet and brown off the chicken breast.
Make sure the breast meat is cooked before continuing on.
Once the breast is cooked, sprinkle on some dried parsley and cover the top of the two breasts with onions and mushrooms.
Add the bacon strips then cover each breast with 3 thick slices of provolone cheese.
Slide the skillet into the preheated 350°F oven for 6 minutes or until the cheese has melted.
Sprinkle on some dried parsley and serve.

    It’s made by Gas-One. Dual fuel. I don’t think the one I use is available. They must have upgraded. I think it’s 18,000 BTU
