During the harvest time of the cork, the whole family works together. Typical Portuguese dishes are served: bread soup based on fresh herbs, ham and migas from the black pig feed by acorns of the cork oaks and tasty desserts as the almond cake Toucinho do Céu and the sweet egg dish Sericaia - that's Alentejo, that's Portugal!

In the Portuguese region Alentejo in the south of Lisbon there are centurie-old cork oak forests, the so-called Montados. They are protected and one tree may only be harvested every nine years. The Alentejo cork is used to make wine corks as well as furniture and clothing. Guida Silva owns cork oak forest since seven generations. Every year between May and August they harvest the valuable natural cork. The harvest is precision work, experienced workers carefully peel the cork bark from the tree trunk. The cork oak is the only tree on earth that is not damaged by peeling. During the harvest months Guida's brother Pedro is responsible for the physical well-being of the whole family. He lives from pig breeding. He was never interested in working in the cork forests. His passion is cooking. His wife Paula and daughter Joana help him to prepare the traditional dishes like the bread soup Açorda à Alentejana, which is prepared with wild herbs from the cork oak forests. At the end of the harvest week, Pedro serves a special delicacy, Migas à Alentejana. This dish is based on the juicy meat of the region's black pigs. The Alentejo pigs feed on the oily acorns of the cork oaks. That is why their meat has a unique taste. Pedro is preparing Toucinho do Céu, a juicy almond cake with icing sugar, and Sericaia, a sweet egg dish with cinnamon, served as dessert. The honey from forest bees from the cork oak forest tastes particularly good with it.

I loved it! Wonderful family! There is no complication on anything...love of family, respect...and good hard work! Very good! This can be anywhere in the world...substitute the cork and pigs for vegetables, goats or cows....anywhere...simplicity, country living. I love the idea of foraging the forest for herbs. Running into your sibling brother or sister in the forest as you are foraging for herbs, much like when you were kids...so wonderful. These people are the salt of the earth...their employees are living like them, they are happy...they know how to treat and value each other. No greed whatsoever!! I loved the video. Thanks. This is so intetesting and at the same time so soothing. I love your channel. Serikaya is an Indonesian word. In Indonesian it is sri kaya which means princess richness or miss richness and we have a very similar baked pudding which is very rich only for the custard we use coconut cream rather than milk and it has a base of sweet sticky rice. It is one of my favourite desrts. So interesting. What order are the monastries in Alentejo from where this dish is said to have originsted? I wonder if in the past some of those monks were in Indonesia?

Credit to Guida for running the cork side of the business, not something you see every day in a 'macho' Alentejo. Pedro too for doing the cooking, great to see a family maintaining traditions and breaking the rules.

@MrBadabimBadabum I'm very familiar with Alentejo having lived, worked and visited all of it over the last 30 odd years. It still remains very traditional which is why I highlighted the above. In my experience, the number of men that not only work on the farm but also control the kitchen can be counted on my thumbs which is why I applaud Pedro.
That bread soup is delicious just with crushed garlic and without herbs. But coriander is one plant that I particularly like in this soup.
"pedro is making his favorite cake..." Clearly Pedro isnt doing squat in the kitchen..
Many similarities with Spanish cuisine. Goes to show how ancient the fraternal history between these two countries is.

Lol yeah we eat lots of vegetables here, it is a place full of farms and most people traditionally grow their own vegetables in their garden. We eat lots of soups, salads and stews with vegetables in them along with the meat. I guess the veggies just weren't featured in this episode. Hope that explains it. I replied to the guy's question before you and clarified his question, go read it because I am actually Portuguese and was born and raised in this region featured on the video, Alentejo. We eat a LOT of homegrown veggies and fruits here (it's a rural farming area and has been for many, many centuries). The vegetables just weren't featured in the video because the meals they made don't have them but those are obviously not all the meals we eat, and our overall diet is Mediterranean, lots of vegetables, fruits, olive oil, fish and yes like you said meat and organic eggs from our backyard chickens. But unlike what you said we actually eat plenty of bread, but it's handmade traditional bread that is naturally fermented not white wonder bread. I am no vegan but a balanced diet that includes plenty of fresh produce is absolutely important.
I love your videos but sometimes the narration includes poor grammar, such as "It's him who is in charge." It should be, "It's he who is in charge." Thank you for filming Portugal!

Are there any actual recipes? I found all this fascinating and entertaining, but incredibly frustrating (as a chef who loves to try out new things) - with no recipes. Have I missed something or a link? Was going to Subscribe but the frustration this causes was a deal breaker.

That is Definitely for the cameras! Iberian portions are pretty big. When I eat out, I always bring most of it home with me and can eat for another 1-2 days! I had a steak 10 days ago, that made 3 meals! OK, so I don't eat a lot, but that was a Big steak. Wonderful too. It was pretty rare, so I just reheated it next day, so it was Medium rare, had it with salad and roasted potatoes, and there was Still enough for a tapa type meal with bread and cheeses. They do it to show off the food. If you had a huge plateful it would not look so good.
Not too long ago those big land owners in the Alentejo province were paying starvation wages to the workers I hope the standards were improved since then.But the Portuguese still lag many things in relation to their neighbors of western Europe!

I feel like the son is overcompensating for not being the one who followed in his father's footsteps...like he has to prove he is just as important and essential...by putting down his wife a bit to push himself up. :/ He seems like a decent man with insecurities so he has to have tight control.
