AI Tasting Menu Dishes?

I use AI to design some fine dining dishes suitable for a tasting menu, with the AI choosing the ingredients, flavour combinations and designing and generating images of how to present the food. I also explore how I think we might integrate using AI into creative processes in the future and how it could become a useful part of our creative practice in general and in making delicious, modern food.

    I really like the esthetic of the images. It could be especially useful for us non professionals wanting to plate simple dishes in a nicer way.

    It’s facinating to see it unfold in our lifetime isn’t it. I feel glad to work in something very linked to nature and people coming for a direct human experience & interaction, but also it’s really interesting to see the ways this could improve & streamline our lives I hope

    @@BurhanHalilov yeah I guess I mean I cook for and serve and speak to my guests in the moment, face to face, they can watch me work, they can taste the ingredients I picked or prepared that day, so there’s a very human, in person fleeting experience. I don’t think AI or VR will take away from those experiences, I think potentially it will make people value the personal and humanness of certain things even more, but also if it can make crafts people and artists better equips to do their work and create there things or experiences I think that will be great

    I have been covering this topic in New Zealand. I believe AI is just another tool to master that can help in the gensis stage of creating something. I agree with your conclusions. I gave each dish a C- grade. In my opinion, I believe it is very good at pattern recognition, but terrible at pattern disruption. Between the masks of tradegy and comeday, all great art etc is seated in pattern disruption. AI also has the draw back of not having an overview of the discovery process. Many of the best things we have discovered are by accident. A.I has a habit of going directly to the finish line without observing other potentials along the way.

    Yes, there is a great points, and I agree it feels like it will become a very useful tool, but creatively it’s missing that aspect of discovery and failure and humanness, which is so cool and so much what we look for in art and creativity. Still, I think it will be a fascinating new tool to have at our disposal

    @@EddieShepherd We are agreed. In the case use of a hospital, where there are many patients with differing medical, nutritional, dietary needs etc, A.I is good at helping with a streamlined formula for a singular menu that can service as many patients as possible. Its good at logic problems. My motto is impact is more important than perfection. Its not so good at creating wow moments, which essentially is what a diner wants from a restaurant. Its more about the social systems. The humanness as you say.

    Curious as to whether you’ve explored any ai platforms specifically designed to pair ingredients based on shared aromatic compounds. I am so fascinated by this technology but find it currently so disappointing.

    I haven’t really. There have been websites before that generated flavour pairing based on shared aromatic compounds, but in the end I don’t think they were that successful because those shared compounds can only really go as far as giving us clues of how things might pair or sometimes an explanation of why they do, but ultimately, the experience of actually tasting is so crucial that it’s hard to use throry as a substantial guide in my view at least do far. I think actually the best resource on flavour pairing is the older flavour thesaurus book which is based on ingredient and flavour. Pairings used across different cuisines and is an interesting read with some useful information.

    I don't know, what kung-fui you have used... but I can't get the flipping thing beyond Risotto and Cock au vin...

    haha, yeah a lot of its suggestions are very basic / straight forward, but its interesting how quickly its processing, how we might be able to use it in the future

    @@EddieShepherd I was digging into the technical side and I think an insight into how it really works is useful. The system simply trying to find a sentence guided by grammar rules and some fixed set of input text. They used very carefully filtered text from internet and added some technical documentation not found online in a comprehensive form and also example of conversations of people. The system is trying to put together some sequence of words, which it already seen elsewhere in a similar context... they don;t have to appear together, but it kinda understand you are talking about recipes and focuses only on those previously learned examples. There is a lot of randomness going on in the background, but I would not expect it to be deeply creative anytime soon, but it will get better at tricking us for longer as long as we add more examples. Unfortunately, they obviously did not included your videos in the training data.
