Thanks, Caitlin! I'm trying them all! I love the cauliflower lentil salad, so I am adding that to the menu this week. The kale, apple, and walnut salad is reminiscent of a salad I make like this adding chickpeas and roasted sweet potatoes or butternut squash, so that goes on the menu! The roasted butternut squash salad looks delicious! I may need to wait to get my hands on the feta for that. And I want to try the farro salad when I can get the farro. It's not at my regular grocery store. I'll take a trip to Sprouts soon for feta and farro!

I can't believe people don't like salads when salads like these exist, i'm sorry you grew up eating iceberg lettuce with cucumbers, tomatoes, and croutons with ranch but there is soooo much more texture and flavor out there that can give you a super well balanced and filling meal
