A Sweet Rice Tahchin | The Cooking Show

In this episode of The Cooking Show, Farideh adapts one of her favorite Iranian dishes: Tahchin, also known as Persian Baked Rice Cake.
Instead of following tradition with a savory tahchin, Farideh uses honey, saffron, and orange blossom water to make this sweet variation. It’s fragrant, fruity, nutty, and perfectly crispy on the bottom.

    mr luciano there was a guy who made gumbo and he put chicken in a pan into that oven. Look it up. He’s another good cook. Look it up.

    Definitely not traditional in the slightest, but it’s a interesting and different recipe! I’ll still try it! But the original is my fav!

    Despite these ingredients should not be add in the real traditional Tahchin recepie, it cooked and came out of the oven adroitly. It's Farideh's version of Tahchin 😄

    I don't know if I just had a "bad batch" or what but I tried saffron in a rice dish ONE TIME over 25 years ago and the horrible taste has lived on in my memory so vividly that all someone has to do is SAY the word saffron and I immediately get a frown on my face. I have no desire to ever try it again so as tasty as this dish looks, if I ever try it, I will DEFINITELY be leaving that ingredient out. Saving my taste buds AND my wallet. Win-win :)

    Honestly I wish she'd actually make the traditional savory version. Making a "dessert" version kinda lost me especially since it's a rice dish... but it looks good nonetheless.

    It looks amazing but it's a really wild take on the original Iranian recipe. As an Iranian living in Iran I have never seen the oranges in between & nuts with honey on top of Tahchin.

    adelia pujianito tahdig is persian and it usually doesnt have toppings its basically rice with a crunchy/harder top layer. And its usually a yellow/orange on top

    tahdig literally means 'bottom of the pot', so its usually just the crunchy rice, crunchy potatoes etc. when you make normal rice. tachin is usually the baked rice with yoghurt that goes crunchy at the bottom

    @Farideh: What do you do with all this food? You certainly make these in large quantities. Do you eat it yourself, distribute it among the staff at Munchies or do you distribute it to the homeless? Just curious.

    I love your cooking videos but I hate the fact that the US uses Cups and spoons to measure everything instead of weight. Shit makes it always so hard for me to correctly replicate the recipes
