No one who enjoys delightful easy dishes can ever say no to this. Sounds great and I am sure it will be delicious. And why oh why do I watch this guy when I am hungry? Clearly not such a good idea but he is, in my book, a master in his own class, and I will be making this for brunch this weekend.

Hi Joel, it's Mike Florence and I trust you and Whiskey are well. This is a SUPERB omlette. The Creme Fraiche works so well and yep, Gruyere just a great choice of cheese. Hi, chef Joel thanks You very good, old classic omelette with ham and chesee, cream delicious. Good.

All I can say is ....." Yummmmmm".... Eggs, Cheese, Ham, Mushrooms.,Scallions .... Perfect dish as well,for a Brunch,to serve four or more....easy and looks delicious. ( served in the pan, bonus points !) I'd have some sliced Avocado or Tomatoes on the side .....😊😋 Whiskey is so patient, lol.

There should be enough for six, so the pan in the middle of the table, nice and hot works well. Just remember not to use a steel knife in a non-stick pan. Enjoy your meal!
