A modern spin on the classic Negroni

The East India Negroni uses a very un-modern sherry instead of vermouth and rum instead of gin for a rich, Christmasy winter warmer.
Created by Jim Meehan to let bartenders know that rum doesn’t only belong in tiki drinks, but I also think it shows what a great foil sweet sherry can be to darker spirits.
SPECS:
45ml (1 1/2oz) Diplomatico Reserva dark rum (for a rich chocolate hit)
20ml (3/4oz) Lustau East India cream sherry
20ml (3/4oz) Campari
Orange twist to garnish
EQUIPMENT:
A jigger
A mixing glass
A barspoon
A julep strainer
A rocks glass
Good ice
METHOD:
Jim’s recipe calls for 2oz rum, but I like to pull it back a little and let the sherry shine through.
Add all of the ingredients to your mixing glass, stir until it is chilled and diluted, and strain over good ice.
Squeeze your orange twist over the drink to expel the oils, which provides a lovely aromatic lift to this quite heavy drink.
Garnish, and enjoy!

    Becoming a huge fan of your channel! As a craft bartender here in the US (Nashville) i find that 9/10 KZread bartenders have absolutely no idea what the fuck they are talking about. I've actually learn d quite a bit from your channel and feel quite validated when I find we do things the same way! Keep up the great work!

    I'm no KZread expert, but with respect to increasing your audience, I think you've got the toughest part nailed: Quality of content. No amount of branding, SEO, collabs, or anything else can make up for boring and worthless content, so you are already ahead of 80% of the competition. You just need your break-out referral from a fan with a billion followers.

    The Negroni has always been my favorite cocktail and this is such a great twist thank you! Also while the alcohol tax in Australia is insane I never thought about the effect on cocktails... On the bright side for the bar scene it must be a blessing in disguise for unique cocktails like this I love seeing wine particularity sherry cocktails cheers!

    I really loved this. Definitely going to try it with the SO later tonight. On the topic of rum: Diplomatico is so good! When it gets warm around here, I love serving it in a tumbler, adding 2-3 drops of orange essential oil onto a big block of ice, then pouring the rum over it. I've recently also discovered Santa Teresa 1796, a Venezuelan solera (!) rum, which I also have fallen in love with.

    @@jonstrongman3292 Dark & Stormy's are great summertime drinks - I use Goslings Black Strap. at 151 proof it'll make you stand up & testify. I don't think I'll try it in a E.I Negroni. I may go with Meyer's Rum instead.

    Hi Cara, I'd put the ice cubes first into the mixing glass and pour the ingredients over ice before stirring with the bar spoon. Don't forget to drop one ice cube for the aliens. As a little twist at the end, I'd add few drops of orange bitter before the oils from the orange zest. Cheers.

    The reason I do ice last is because in a service environment you can pause- if you start building and have to turn away to run some food, chuck someone out or whatever haha then the drink isn’t just sitting there diluting so doesn’t go to waste. Doesn’t matter as much at home of course! But the sacrifice to the alien overlords can never be skipped.

    I purchased sherry after watching your video on it a few weeks back, and I've made a few of these since then, and similarly I can't purchase the original rum in my area. I've used Pusser's and a local blended rum from Maggie's Farm called Hidden Harbor that's a blend of Jamaican, Guyanese, Martinician, Bajan, Trinidadian, and their own rums and then rested for a little bit of time in oak to marry the flavors. Both turned out deliciously, I found it to be quite delicious and a nice change from Boulevardiers which have been my fall-back lately.

    Diplomatico is an interesting outler. It's sweetened like Spanish style rums, and made on an ex-Spanish colony, but the production method is British style, a blend of pot and colums stills. It's more closer to Guyana, Barbados and St Lucia than to Spanish style rums on Cuba, Porto Rico and Trinidad. Which was a British colony, yet it makes Spanish style rum :)

    Absolutely, it’s why I recommend the Mantuano if you can only have one rum- flavourful enough to stand up in most drinks but won’t overpower more delicate cocktails.

    One of the great things of Venezuelan rums is that they must (by law) age in aoks barrols for at least two years. That's kind of like those chocolate flavor that you get in there. Reserva exclusiva it's one of the best along with Diplomatico Mantuano. You should try if you can find Carúpano 6 and 12 years for a woody flavor, they're the best venezuelans rums for me.

    Yeah we shoot from our sister restaurant, which has bar tools but not particularly pretty ones because they’re much more food/wine focused. I always forget at least one thing, usually a barspoon haha. We’re shooting again today though and I brought mine from home 😉

    Cara, you are tops since I discovered you two weeks ago. Next time I'm Down Under like for the Australian Open (if it's on), are you locatable at some truly delightful bar or classy tavern??     Love your videos! That said, I must say this is an odd rum choice for something calling for Banks 5. So sad that Australia has such limited rum options or ones that are so expensive. I feel for you there, for sure, as it's similar to my time I spend in Sweden.. yikes! Regardless, you always have great technique and present all this stuff so well for your audience. Lovely video.

    @@monoyamono Another multi-island aged and filtered rum or a blend of a couple. A bit of oak in there would be a nice nod to Banks 5 so having perhaps Real McCoy 3 in there would be nice. Plantation 3-star mixed with denizen white as an example. Hamilton white ‘stache mixed with Diplo Planas etc. Probitas/Veritas mixed with Ten to One white etc. Have fun with it.

    Loving this channel. Just picked up some Fino after watching one of the other videos and have some PX tucked away, but no cream. Would one or both of these work? Also any good recommendations on Sydney bars?

    Try the PX but in a much smaller quantity- maybe start with just 10ml and see how that goes 😊. I haven’t honestly been to Sydney that much recently but Bulletin Place is always great, and I love Baxter’s Inn. I’ve also had a great time at Earl’s Juke Joint.

    What other rums do you think would work here? How about blending a Havana Club with Smith & Cross to get the blend of rich and funky? (I can't get the banks 5 rum so I'm trying to work out a workable substitute.)

    Great! Always feels a bit painful when I see people using Diplomatico Reserva Exvlusiva in cocktails. It's a great rum but with that price I am always hesitant to put it in a cocktail. Hehe

    Hey pal! I have, we always have a lot of originals on the list at Bomba. To be honest it’s more about which flavours are seasonal, and then build from there. Obviously on a menu you have to have a wide range of spirits so I’ve used most things but my personal favourite to work with are sherry and other fortifieds, and gin 😊.     I’d definitely say a feature of cocktails is that they’re cold (excepting actual hot drinks of course haha), whereas most neat spirits are best served room temperature. Could definitely be a good episode though!

    i was wondering if ther is a specific way to serve diferent type of drinks, like stired and shaken drinks witch one should you serve first in order to delay dilution?

    Generally if I’m doing a round of drinks with some stirred and some shaken, I will build them all first, then add ice to everything. The stirred can sit for a second (I’m obviously assuming a certain level of speed here) while you shake, and strain the shaken ones straight away. Never leave the drinks sitting on ice in the shaker tins as they will go really watery. Then finish stirring quickly and get those strained ASAP. You also want to pour drinks being served straight up before the ones on ice- they should go out as soon as they are poured. Hope that makes sense, bar work flow would be a great video!

    If any of you watching this like rum, and have never tried Diplomatico Reserva.... BUY. IT. Just on its own, as a sippin' drink, it's amazing. I have a bottle right now, and while I'd never use it in a mixed drink, it's just amazing stuff.

    Cocktails in Melbourne generally start at around $18 for something less boozy (using spirits and aperitifs for example) and $20 for a full 60ml of spirit, but even that’s a bit of a bargain nowadays. A lot of bars will start at $22 for a house/rail spirit Martini, Manhattan etc and go up from there if you choose more expensive booze. From memory (because we’ve been closed for a while now!) Diplo Reserva sits at around $16/$18 a nip so a full two shots would be almost $40 without factoring in the Sherry and Campari. Melbourne is not a cheap city!
