A Day in Halachó, Yucatán

Pati visits Chef Wilson Alonzo in his hometown of Halachó to prepare a traditional Cochinita Pibil in an underground pit. They begin at the local market to source ingredients. Then Pati helps Wilson prepare the achiote marinade, along with his grandmother who taught him traditional cooking and isn’t shy to correct him. Hmmm, oja de platano/banana leaf truly adds a very distinctive sabor to any dish. Personally, Tamales made with oja de platano is my yum choice. Buen Provecho! Peace be with us all 🙏. "Isa"

I watch your channel an tv you make amazing food
When I first heard of you I literally heard you, it was a couple of times on The Splendid Table, a radio show. When I saw you on PBS I was a little confused, in my head I had pictured the Chiquita banana girl, raven haired Carmen Miranda, most likely without the fruit basket on top of the head. Anyway you are just as lovely as Carmen with or without a fruit basket. You and Rick Bayless are my go tos for Mexican cuisine except I don't think of chef Bayless with a fruit basket on his head............well, nto too often.😁
