📌內餡材料:
大白菜/或喜歡的菜400克
鹽1大匙
板豆腐200克(或半盒)
蔥花30克
洋蔥丁100克
粉絲100克
醃肉料:共可做2種口味
醬油3-3.5大匙
薑末15克
蒜末15克
細糖1大匙
蠔油1-1.5大匙
米酒1大匙
黑胡椒粉1/4小匙
麻油2大匙
豬絞肉600克
*泡菜200克(濕重)
*辣椒粉(泡菜用)1小匙
蒸餃皮:也可用水餃皮
中筋麵粉200克
滾水80克
冷水50-60克(分次加,看麵粉吸水力)
鹽3克(可略)
火龍果餃子麵糰:(如果只做水餃,份量要*2)
紅火龍果125克
水50克
中筋麵粉125克
火龍果汁62.5克
鹽1/4小匙

📌Filling ingredients:
400g Chinese cabbage/or favorite vegetable
1 tablespoon salt
200g flat tofu (or half a box)
30g chopped green onion
100g diced onion
Vermicelli 100g
Ingredients for cured meat: 2 flavors available
3-3.5 tablespoons soy sauce
15g minced ginger
15g minced garlic
1 tablespoon fine sugar
1-1.5 tablespoons oyster sauce
1 tablespoon rice wine
1/4 tsp black pepper
2 tablespoons sesame oil
600g minced pork
*200g kimchi (wet weight)
*Chili powder (for kimchi) 1 tsp
Steamed dumpling wrappers: You can also use boiled dumpling wrappers
200g all-purpose flour
80g boiling water
50-60 grams of cold water (add in batches to see how well the flour absorbs water)
3 grams of salt (optional)
Dragon Fruit Dumpling Dough: (If you only make dumplings, the serving size will be *2)
Red dragon fruit 125g
50 grams of water
125g all-purpose flour
Dragon juice 62.5g
1/4 tsp salt
