    Should we decorate them after maturing? And after decorating them should we store them in the fridge or freezer to set the toppings???

    That's generally up to you, but I usually decorate my macarons after they've matured, or at least after the fillings have set up in the fridge for an hour or so. If you prefer, you can decorate before filling, but I'm always worried that I'll mess up my work as I put them together. For the toppings (like chocolate) that need to set, you can do that on the counter or in the fridge. If you need to freeze your macs, it might be best to decorate later, as in before you serve or package them. That being said, I have successfully frozen many of these after decorating. The only issue I had was the gold leaf coming off because I wrapped them in cling wrap.

    @bakesandblunders Oh thank you! Actually I'm planning to start my macarons business but I dont know what should be the ordering method. Should I take pre-orders or go with the fast delivery option? Im worried if I store them for longer time then macarons might be soggy because of the filling. Any ideas regarding your experience? Guide me please.

    Congratulations! I don't currently sell my bakes, but back when I did sell, I did flash sales and custom orders. If you haven't yet, I would try out both and see what works best for you and your customer base. Both options can work well. Personally, I prefer flash sales because I don't like the stress of custom orders. I would post in my bakery FB group to let customers know what was coming up that week, then again when they were ready. I never had a problem getting macarons out the door, though this hasn't always worked well with other bakes like cupcakes. I frequently freeze my macarons (longest was about 3 months), then thaw and they are great. I like to wrap a couple in cling wrap, then store in an air tight freezer bag or container. Freeze, then thaw overnight in the fridge, then on the counter for an hour (still wrapped tight). I never did this with super wet fillings like curds or cream cheese buttercream, so I can't speak as to how well that works. Hope that helps! I'm happy to answer any questions as best I can :D

    @bakesandblunders that's so sweet of you! What fillings do you use in your macarons? As you said that you stored your macarons for 3 months and they were great, I would love to know about it. I have heard that buttercreams works well as they are less moist but don't know much.
