    Awesome, thank you. I started with the Edge Apex, which came with some lapping films. I just abandoned that system because of it's inconsistencies, and moved to the WE. But I knew the films did well. So, I just picked up a couple of these glass platen stones and the films. Haven't used them yet, but I expect good things. Everything else you mentioned regarding the Aluminum Oxide and breaking in the diamond stones mirrors my experience. The Japanese stones are awesome, but they are thicker which means rechecking your angle, and you have to flatten them occasionally, and the water...etc. Diamonds and film are the way to go. Easy.

    Good to see someone else still appreciating the diamond line-up from WE. I've been running their system for 4 years, and just found out about this 2200/3000 diamond stone today. You're the only content creator with this stone currently, I would love to see more information on the edge it produces pre-lapping films! I've had this system long enough that I had to have the Kangaroo, Chosera custom handles, and their 0.6/1.4 ceramic stones to get a mirror finish. Swapping the angles using the wetstones is a pain, I would love to use the diamond stones to 3000 then simply lap/strop depending on the edge type! Agreed on avoiding the ceramics. I've had countless sets simply fall off mid-sharpening and leave me with an expensive handle and dropped shattered stone. The films are undoubtedly the way to go and the Alu Oxide lasts for quite a few knives. What difference did you find in the diamond lapping films? Haven't tried them yet but you seem to know what you're talking about here.

    I worked in the foodservice equipment industry for years. I can't tell you how many chefs I've seen ruin blades on steels. They always do that super fast, nearly flat angle that very likely does nothing or ruins the bevel. I just bought the wicked edge system and I can't believe anyone uses anything else. We used to sell the arkansas stones (novaculite) you mentioned, I just think they don't teach people how to properly use them and most end up getting frustrated with flat stones. People buy the highest grit they can find and can't understand why its not instantly sharp. They come with a little wedge guides set at 20 and 17 degrees which definitely help but don't solve the issues of a wobbling hands and uneven pressure. Unless your a 400 year old japanese man, it's a skill that takes a crazy about of time to master. The wicked edge system really takes all the stupid out of the equation. It certainly takes time to lean how to position the knife but, once you've profiled and "reset" your knife to the system, Its absolutely second to none. My filet knives are so sharp, they whittle the bone when I get too close. I'm about to take the plunge on some of the Japanese stones you've mentioned, stropping just isn't getting me to where i'd like to be and seeing that mirrored edge made me throw my wallet at the screen.

    bought pro pack 1, bought the 1500 grit with the glass that i put the 6 lapping tape on, 1500/2200 diamond, 3000 diamond with the glass that i put the 1 lapping tape on. the system came with the the 5 and 3.5 paste so i use those as well and progress like you but man are the stones expensive. paid about $400 for the 1500, 1500/2200, 3000, 6 and the 1 lapping tape. the pro pack 1 cost me $500 so you figure a $1000 dollars for piece of mind. i suck at free hand and spent money on other systems like apex and kme but the wicked edge beats them all hands down in my opinion. used to pay to get my knives sharpened until my american lawman got hacked up and i said fuck that and spent money until i found this system. the consistency that this provides is by far the best out of the systems i mentioned( in my opinion). yes there is a slight learning curve but once you find the sweet spot for each knife, razor, razor sharp. also, some steels perform better with a toothy edge(s30v) so i dont completely go through everything but steel like m390, takes a polish edge like a champ

    so let me start by saying I've already got fantastic results not quite full mirror polished finish but excellent results with shiny edges that are hair shaving sharp push paper cutting Sharp and this is how I do it. I wanted an opinion on my way. I start out apexing the knife with the 600 grit depending on the steel I'll go 200 if it's something really hardened. After I apex, I'll move up to 800 grit and then a thousand grit wicked edge stones and I will actually tape on 2000 grit sandpaper and 3000 grit sandpaper to the actual stones using tape. Am I missing out by not using something with diamonds in it or stropping even though it's extremely high grit sandpaper that I'm taping on to the stone itself?

    Im about to pick up a WE pro pack 1 with plans to expand to a system similar to this. The only real difference is I would be getting the 1500/2200 stone next, then the 3000/glass blank. It's only five bucks cheaper than the 1500/blank 2200/3000 in the video but it allows me to expand one set of stones at a time without paying for a blank side I wouldnt use for a while. My only foreseeable problem is the lack of 0.5 micron films. WE doesnt have them on their site and the only place that has them locally only has them in solid sheets so I would have to cut my own to size.

  • @Sweetknives

    @Sweetknives

    4 жыл бұрын

    Robert Lefeaux that sounds great you will get excellent results. You should get fairly close even without 0.5 micron. I can’t emphasize enough, stick with the diamond 3M lapping films, they last longer and produce better results.

  • @Stings2pee
    @Stings2pee2 жыл бұрын

    The 6 micron lapping film is redundant since 3000 grit is equivalent to 6.6 micron. After the 3000 grit, just go straight into the 3 micron film. You'll get the same results and you'll save yourself $30.

    Thanks for sharing. I am curious about how you maintain your knives after they’ve been previously sharpened on your WE and after they’ve been used enough to experience degradation of the edge. Do you just go through the entire progression every time you need to touch up your knives?

  • @jaxbeach09

    Ive got this same sharpener. The only time I go through the entire progression is if I get a new knife and want to put my preferred angle on it. I try to touch up my everyday knife at least once a week. To me and this is my opinion, if it doesnt shave its not sharp. If its pulling the hair and not shaving it, I start at 1000 grit diamond and go to 1600 grit ceramic to give it a touch up. Hope that helps.

    Is the blade is damaged then sure start from scratch but no you wouldn’t normally. If the blade has lost its edge slightly I start at 800/1000 and move up to 1600 then strops. After use I find a quick hone on the steel works brilliantly for keeping the edge longer and if the edge isn’t sharp enough then a quick 20 per side strop will usually tell you if the diamonds need to come out

    Neil oppa I’ve seen it and like many sharpening systems, you can get a knife sharp with it, no doubt. I still think wicked edge is the best because of the stones, lapping film on glass plates, and diamond stone grits that go up so high, along with all the other attachments you can get. No matter what system you go with, take your time and practice a lot. I used to think by having the wicked edge that my knives would easily have a mirror edge, but truth is it took a lot of practice and hard work to get them that way, now I know how to do it fairly easily.

  • @mikebrost286

    @mikebrost286

    4 жыл бұрын

    This totally depends on the knife material. I've done Wusthof & Kitchenaid knives that I can do full size kitchen knives in 20 passes per side with the upward swipe motion, Shun & Miyabi @ 61-62 HRC usually takes more near 100 passes per side. Super hard tool steels like HAP40, some cobalt stuff, anything above 63 HRC could be hundreds of passes per side to completely remove old scratches. I just spent 6 hours getting a 2mm chip out of a HAP40 knife, then bringing it to 8000 grit shine on a 10.5" asian knife, by far the longest i've ever spent on a knife. Most are done in 15-30 minutes for 8" kitchen knives. Divide by length for other types of knife.

    There are different ways to sharpen high end chef knives, one of the ways utilizes the wicked edge putting a bevel on the end at whatever degree you want. The other is to maintain the original shape and if using that method, stones probably would work best. Is personal preference which way you choose and like best.

    Hopefully you haven't been holding your breath for a year waiting on this response, but yes, 3000 grit is about 6.5 microns. Really don't need both of those. Honestly, I'd probably go 1500/6 micron then 3 micron/1 micron and call it a day. You'd get a pretty incredible mirror with that and you're cutting out two sets of handles. Even if you wanted to go crazy you can swap that 3/1 to a 3/1.5 and add the 1/.1 or something and still have 1 fewer set of handles than this.

    Your set of two glass platens (4) cost $90 plus shipping. Your set of diamond lapping sheets costs $160. So round it off it costs you an investment of $250 + dollars to lap a mirror edge I purchased three sets of glass platens (6) at $140 and a set of ten sheets of Aluminum oxide lapping sheets for $25. I cut my own at a cost of 12 cents a platen. My investment of $165 has more steps in progression which lowers the scratches better. I use 9, 5, 3, 1, 0.3 and 0.05 (500,000 grit) The big plus is my system costs about $100 less than your system and I have 22 refills of lapping sheets per grit as opposed to your 10 refills per grit. A downside is I have to cut my own platen refills and I need two or three strokes to your one stroke because aluminum cuts slower than diamond. In the end a mirror polish of 500,000 grit is superior to a mirror polish of 60,000 grit and really does not take much extra effort and costs less.

    There is nothing wrong with Aluminum Oxide lapping films, in-fact, I use them a lot myself, and I agree its a lot more cost effective to do it yourself, so if you are able to do it yourself I think that's great. For the other 80% of people out there, buying them precut is a lot better since you dont have to fiddle with making them the right size, so I now offer these perfectly precut to anyone out there, here is the link to my listing: www.ebay.com/itm/203307008270
