I'm as old as dirt - and my mother ALWAYS made cream/vinegar dressing for both cucumber salad (cukes from the garden, of course) and garden lettuce salad. It was on the menu almost every single night during the summer. Now why I never thought to try that mixture on my daily salad, I do not know! Thanks for bringing this back out of my old memory bank!

I'm using this recipe to make Blue Cheese dressing and I have come up with a procedure that makes my life a little easier, and I thought I would share it. 1. Buy some wide mouth 16 oz mason jars 2,. Pour one cup of heavy cream into the mason jar and mark the jar with a sharpie - never dirty a measuring cup again. Or just use the 1 cup mark built into the mason jar if you trust that to be accurate. 3. Add salt and pepper to taste and 2 tsp of vinegar 4. Put lid on and shake till frothy - Never dirty a bowl or whisk again 5. Add ½ a blue cheese container 6. Use a stick blender to break up the blue cheese and mix it with the cream. Stop when you get to your desired thickness 7. Pour in remaining blue cheese and stir in with a tablespoon. You may need to do this in small batches to make sure it all fits. 8. Put lid on and toss in the fridge. Way less stuff to clean up. And to clean the blender... Put a glass in the sink. Add dish soap and hot water. Run the immersion blender on high for 30 seconds to clean the inside where the blades are. Pull it out and wash the outside with a soapy sponge. Rinse off and throw in dish rack to dry.

I stopped eating salad because of the salad dressings out there on the market (even the Keto ones). The dressing recipes I've tried from Keto youtubers in the past were just too much, but as soon as I saw this video, I made the Ranch version just using the herbs I already had in my pantry. Honestly, the best salad dressing I've ever had, so easy and quick! This is literally an answer to my prayer! Thank you so much for all the work you do to share your recipes, tips and tricks. They are much appreciated!! God Bless Serious Keto!!

Milk + lemon juice is a way to make sour cream or buttermilk, so using heavy whipping cream + vinegar is basically the same thing - only thicker; especially if you refrigerate it overnight. The process that this uses is called 'clabbering'.

I learned how to make this dressing from Jacques Pepin. He said it was a standard dressing growing up and he continues to make it to this day. I love it and if you think about it, your only calories are in the whipping cream. Oil based dressings have a lot more calories.

My mother used to make my father a vinergarette dressing every night for his salad. He would take that and add mayo to it to make a creamy dressing. Since starting keto I've been eating so much salad but was having a difficult time finding dressing that were keto but taste good. So, I've been making my own vinegarette with avocado oil, vinegar and mayo! Tastes so much better. I'm going to try your way tonight! Thanks for another great idea!

With this recipe I can easily change up my dressing so my salads don't become "boring". Thanks!

When you really like something your face lights up. All the older ladies in my family made this simple dressing , it’s the one I grew up with. Now please teach people how to make Hollandaise sauce. It’s so Keto, takes 10 minutes, and works great with an immersion blender, or whisk if you’re old school.

GreenEyes- Hollandaise is my go-to flavor indulgence while eating keto. I make a batch, freeze it in an ice cube tray and use the blocks one at a time on eggs, steak, veggies, quiche, or whatever I want to sauce it up. They melt so quickly. A quick stir in a small dish after a minute in warm water to soften and it is good to go! Yumm!

This is great! I’m 77yrs old and I bet I’ve only bought 3 bottles of store bought salad dressing in my life. I didn’t like any of them. So I’ve been making dressing for years but mostly olive oil based. I make mayo (also for decades) and use that for creamy dressing……but this is really fast and I always have heavy cream in the fridge. So I’m sure it will be my new mainstay. Change up will be with homemade sour cream. Thanks a million. We need fast, simple recipes that taste good. Some keto stuff is a bit disgusting ( IMHO). Especially bread items. 🤨

@K W on the off chance you haven't tried it yet, you should. It's sweeter and less pungent than the fresh - and it enhances flavors via umami. I had a smaller bulb variety and they were like sweet, faintly garlicky, gummy bears. They made the dressing really pop in flavor.

The best recipe, actually an idea, that I ever got from Jacques Pepin was what he calls "Fridge Soup." Whenever you stand in front of your open refrigerator trying to decide what to make for a meal, and you find small amounts of lots of leftovers like cooked meat, cooked veggies, raw veggies that are going to go bad if you don't use them soon, and salad greens, etc., take every thing out and dice it into bite-sized pieces. Put it all into a pot with whatever broth or stock you have. If you have none, add water and some bouillon cubes/packets. Add whatever dried spices you want, such as oregano, basil, thyme, salt, pepper. Bring to a simmer and cook until the raw veggies are tender. Taste for seasoning and adjust. There you have it---Fridge Soup! Genius! This is a super way to use up all of your leftovers, and you can call it "high cuisine" because the technique comes from such a respected chef as Jacques Pepin!

So... I was making this dressing tonight for my first fully keto dinner with our neighbors, close friends here in France. I wanted to give them that total keto experience, so I even made a cheesecake keto style. While I was beating the cream for this salad dressing, I thought maybe I hadn't whipped it quite enough, so I did a little more. And when I added the vinegar, it turned into whipped cream! Ha ha ha! It's delicious, and I'm going to serve it anyway, but Pascale and Gérard will be surprised, to say the least, when I pile it up on their salad greens. Dinner's tomorrow night - Apéros first, of very light gin and diet Schweppes, mixed nuts and tiny cream cheese and ham snacks. Then we're having braised lamb shanks with onion reduction, cauliflower rice rissotto, and that famous whipped cream salad dressing over mixed salad greens. Cheesecake with blueberry sauce for dessert! Yes! Needless to say, we'll be fasting beforehand, but a dinner like this is something I've dreamed of doing. It's a great way of convincing people of how good and wholesome this way of eating really is. You inspire me. Keep 'em coming, Steve. Thanks for all you do.

Jacques and his daughter used to have a cooking show on PBS, when I was a kid that was the only cooking show (I knew of) on TV...of course we only had 5 TV stations and a thing called UHF was just showing up. this is a great recipe and I will give it a shot. I make a chop salad from fresh broccali, cabbage and whatever else I have laying around (tiny bits) this would be excellent on that. thanks

Thank you so much for this easy recipe. I do love homemade dressings much better than store bought, simply because you can control the ingredients. My grandmother used to make something similiar but I had forgotten or did not realize how simply it was to put together. Thank you for this...the combinations of flavours on this are endless.
