・2.8 oz (100g) Chicken
・1.7 oz (50g) Green onion (Negi)
・1/2 tsp Oil
・1 cup (250ml) Water
・1 tbsp Soy sauce
・1 tbsp Sake
・1 tbsp Mirin
・1 tsp Sugar
・2/3 tsp Dashi powder
Topping
・Mitsuba leaves

Ingredients [for 1 serving]
・3.5 oz (100g) Soba noodles (Dried version)
・0.8 cup (200ml) Boiling water
・1 tbsp Soy sauce
・1 tbsp Mirin
・1 tsp Sugar
・2/3 tsp Dashi powder
Tempura (2 servings)
・3.5 oz (100g) Lotus root (Renkon)
・2.5 oz (70g) Eggplant
・2 oz (60g) Kabocha squash
・2-4 Shiso leaves
Tempura batter
・0.4 cup (100ml) Ice water
・2.5 oz (70g) Flour
・1/2 Beaten egg

・0.8 cup (200ml) Boiling water
・1 tbsp Soy sauce
・1 tbsp Mirin

・2/3 tsp Dashi powder
・2.8 oz (80g) Thinly sliced beef
・1.7 oz (50g) Onion
・2 tbsp Water
・2 tsp Soy sauce
・2 tsp Sake
・2 tsp Mirin
・1 tsp Sugar

・Minced green onion

・6.3 oz (180g) Grated Japanese yam (or Chinese yam)
・3.5 oz (100g) Nameko mushrooms
・1 tbsp Sake
・1 tbsp Soy sauce
Topping
・Egg yolk or Onsen-egg
・Aonori or Minced green onion

    Soba are SO good, only discovered them recently. It's really hard to get soba here with a high buckwheat amount though, mostly brands are with a high wheat content.

    Mind goes to❣️beef soba. By the way eating❣️lotus root this way is the best because this is easiest. Usually ate growing as braised version, while learning by myself got to known it is long simmering nearly 50minutes. Fried chicken with❣️green onion are delicious. Tempura crunchy ❣️egg plant looks octopus so cute! 👩‍💻❤Thanks for teaching and I hope you have this weekend great.🖤

    Great episode as usual, Sayaka. I love soba noodles, also cold in the summer. My fav is with only 20% wheat flour. Sometimes I make soba with European toppings like an Italian ragu or small clams, Arigato and tsuru-tsuru :-))

And, you know the 80% buckwheat soba! I always buy the soba at supermarket that contains a lot of flour instead of real buckwheat flour, so I almost forgot how it tastes like haha. Maybe next time, I will buy the high percentage of buckwheat soba 😁
