In this video I’m going to show you how to make and decorate a 6” Black Sesame chiffon cake. I’m also going to show you two different ways to make black sesame paste. This cake is bursting with Black Sesame flavor in every bite!

Ingredients 材料:
1) 6” Black sesame cake (6寸黑芝麻蛋糕):
• 3 egg (3个蛋)
• 45g Cake flour (45克 低筋面粉)
• 30g Black sesame powder (30克 黑芝麻粉)
• 70g milk (70 克牛奶)
• 55g Veg. Oil (55克 植物油)
• 45g Sugar (45克 糖)
• 1/2 tsp Cream of tartar or lemon juice | 1/2茶匙 塔塔粉或柠檬汁
2) Black sesame whipped cream frosting (黑芝麻淡奶油糖霜):
• 1-1/4 cup heavy whipping cream (1-1/4 杯重奶油)
• 3 tablespoon powdered sugar (3汤匙糖粉)
• 4 tablespoon Black sesame powder (4汤黑芝麻粉)
3) Black sesame paste using black sesame powder (用黑芝麻粉制作黑芝麻酱):
• 90g (1 cup) Black sesame powder (90克 或 1杯 黑芝麻粉)
• 30g (1/4 cup) Chopped walnut - Optional (30 克 或 1/4 杯 核桃碎-可以不加)
• 50g (1/4 cup) Sugar (50 克 或 1/4 杯 糖)
• 85g (6 tbsp) Melted unsalted butter (85 克 或 6 汤匙融化的无盐黄油)
4) Black sesame paste using black sesame seeds (用黑芝麻制作黑芝麻酱):
• 1 cup black sesame seeds, wash-dried-and toasted. (1 杯黑芝麻,洗净、晾干、烘烤。)
• 30g (1/4 cup) Chopped walnut - Optional (30 克 或 1/4 杯 核桃碎-可以不加)
• 7 tbsp honey (7 汤匙 蜂蜜)
• Melted unsalted butter or sesame oil if needed, add 1 tablespoon at a time. (如果需要,可加入融化的无盐黄油或芝麻油,一次添加一汤匙。)

    Did you grease or lined the cake pan before pouring in the batter?

    No I don't and shouldn't. One of the key factor in baking chiffon cake is that you do want the cake to stick to the pan once it's baked. This way, when we cool it upside down, it is not going to fall out of the pan. Cooling it upside down is the key success of keeping it fluffy and airy once completely cooled. The pan I bought is actually a non-stick pan. So before I use it, I use a coarse sponge to scrub it in order to take away some of the non-stick coating.😀

    (1) Can we substitute the walnuts with pecans? (2) I bought the readied toasted black sesame seeds so can i still use granulated sugar instead of honey as i prefer my paste not sticky to use in mingjiang kueh's fillings. Tks.

    (1) Yes you can. Adding nuts to the paste is to give it a more flavorful profile. (2) Yes you definitely can. 🙂
