The broth is like GOLD. As far as I'm concerned, the most valuable skill you showed folks was how to get that beautiful broth from a pressure cooker and can it, like my Granny did. She bought me pressure canner for a wedding gift in 1985.

Also a good idea to keep a few cans of whole potatoes on hand for when the dehydrated ones won't work out. Another good idea for ham scraps is ham and cheese omelets. There are just so many possabilities.

My Mom use to take some of our left over ham to make ham salad spread. She would use her meat grinder to grind up some of the ham, put in some sweet pickle relish and mayonnaise, then mix all together. Sweet and simple.

just last night I made what I'm calling thanksgiving casserole. leftovers used were turkey, baby carrots, onions, fresh mushrooms, dried cranberries, gravy and rhodes rolls dough. non leftovers used were fresh spinach, rice and cream of chicken soup. everything was mixed together and put in a deep casserole dish, then the dough was flattened and stretched out over the top. baked in oven at 350 for about 20 minutes. it was so delicious!

I was told by my mom who grew up in Missouri. To put a small amount of vinegar in when you are making to broth. It breaks down the bones and makes any meat, true bone broth. Hope that helps. You did great with your ham.

An idea for the ham broth is tater dumplings. Cook potatoes in the ham broth like you were going to make a potato soup. Make dumplings like you would for chicken and dumplings. Put your dumplings in when your potatoes are fork tender and cook on medium low until the dumplings are cooked. You can add some of the shredded/diced ham if you have some but it will still be delicious with just the broth, potatoes and dumplings. I serve it with a hot pan of cornbread. Cheap, filling and it makes a ton.

My family loves leftover ham and spinach quiche. Without crust. 1 pkg frozen spinach, 1 finely chopped onion microwave for 10 minutes. Squeeze out the liquid. Set aside. In a large bowl wisk 8 to 10 eggs, salt and pepper to taste, 1 and 1 half cups shredded Cheese, of you choose and 1 lb chopped ham and about a tablespoon of Texas Pete. Mix in spinach and onions. Pour into a 9 by 13 greased casserole and top with 1/2 cup shredded cheese. Bake at 350 for 45 to 50 minutes.

I purchase a spiral ham when they do on sale once a year. I cut all the meat I can off the bone. I package it in quart size freezer bags or vacuum sealer as slices and diced. I use the packages to make quiche, sandwiches, scrambled eggs, add to Mac n cheese, soup, homemade hot pockets, scallop potatoes with ham, add to green beans and so many other meals. The bone gets used to make a pot of beans which I freeze portions future meals. There is so much as you showed to do with a ham. Thanks for the video. It was another great one.

You can also use ham in a breakfast casserole ( save about a cup of chopped ham or sausage) makes up a nice size casserole for Christmas morning. Then all you have to do is place it covered in refrigerator for Christmas morning. It is like a savory bread pudding. Make up a package of blueberry muffins and add some fresh fruit. We even have this for dinner at times. My recipe has sandwich bread, cheddar cheese, eggs, green onions chopped, milk, S&P, ground mustard ( or a tsp of Dijon prepared mustard can be substituted), and either diced ham or cooked breakfast sausage in it. Cover and store over night in refrigerator. Uncover next morning and bake at 350 degrees for 30 minutes or until done. If using a glass casserole dish, start it off in a cold over. So nice to come home to on a busy night or have on a special holiday for breakfast or brunch. Great with homemade cinnamon rolls, muffins, fresh asparagus as a vegetable to go with it, and fresh fruit with a sweet dip and juice of some kind. If there happens to be leftovers you can cut it to fit inside flour tortillas add a little more cheese and roll up individually for breakfast tortillas.

Hey gorgeous talented woman. I want to start canning so badly. Can I come have a teaching session for a couple of days from you? I am in Georgia and have always loved the area you are in. 🤗🤗🤗🤗😜😜 OMG I was at my Mother in law’s Thanksgiving and she was throwing away two Turkey carcasses. I grabbed those things and brought them home. I got two sandwich bags of meat off of them. Then I made 10 quarts of broth yesterday off of one rib cage. I froze the rest of the scraps to make broth in the future.

Brooke I paid $34 for my ham this Thanksgiving you can bet every last bit of it will be used up or froze. I have 6 ham bones in my freezer because Aldi had hams for .87 cents a pound I bought for Easter and froze them every couple of months I pull one out and cook it up and if we get tired of eating ham I chop up what's left and freeze it for scrambled eggs with ham or Mac n cheese with ham or bean soup and I use a bone with extra meat on it. Loved this vlog Brooke.

One of our favorite ways to use leftover ham is to fry it up for breakfast. We usually do this at least twice. I also make breakfast bowls/burritos quite often and when we have ham, we will add that as our meat instead of bacon/sausage. Another option is to freeze the leftover ham. I usually freeze in meal sized portions. I do this when I just don't have the time to can or if we are just tired of ham..lol.

There's also your 'Greens' which your ham bone can season. Your peas & lima bean dishes can use some of that Ham. Personally I would prefer 'Pinto Beans' but there's your choice of Beans to can. You can also mince that little left over ham and serve it over rice or with eggs for breakfast.
