I have fibro and several other autoimmune disorders. On days when I feel well I brown up ground beef. I usually make 10lbs at a time. 5lbs of seasoned beef and 5lbs of taco meat. I then separate and freeze. That way on my rough days I don't have to stand over the stove and can whip together a quick meal. I also freeze individual serving sizes of taco meat. I usually always have rice premade in the fridge. My teenagers can throw together a burrito bowl or just throw some Parmesan cheese on the rice. It's been a life saver for me.

I get a roast around 11 to 12 $. usually lean so I use the crock pot for 12 to 24 hours. While it cooks I keep the pot full of water. I use soy sauce and worcestershire to season it. Some times I add more seasonings, depending on how I feel. After the 12 to 24 hours I pull out the meat. I break off a small piece to chop fine and add back in the pot. I cool the rest to use in sandwiches, tortillas or with rice, on potatoes, it spreads that 12 $ out. Now I have a big pot of meat flavored hot liquid. If I feel bad I add canned drained corn, carrots, pre-chopped frozen celery or celery salt, garlic and onion fresh or frozen or powdered. I add mostly potatoes. If I feel bad I add canned. It takes up to 6 hours on high for the juice to soak through the veg. When i add the veggies i remove about 6 cups of broth and save it. I file the veggies to the top. The family gets hot stew. At this point the crock pot is on low or warm. Before bed I turn the crock pot to low and add those 6 cups of broth back in with all new veggies and it cooks over night. This usually lasts our all adult family of 4 around 3 to 5 days. If any is left over I put it in the fridge or freezer but I try to separate half of any liquid first. This I use as a hot cup of broth on a cold day or when someone is sick for sore throats to sooth and get something on sensitive stomachs. The 11 to 12 roast make week to 2 weeks of possible lunch and dinner meals. With cheap beard, tortillas, corn bread, noodles, rice and potatoes you can make filling meals and still feel like your not deprived. I you have medical conditions it helps cut down on the work. Plus kids 6 to 7 up can make at lot of those side meals with supervision. You don't have to feed them snack food or microwave instant food which can add up $. Plus for several days a hot meal is always waiting.

Comfort food growing up was my mom's version of a Mexican Rice: Brown up 1 lb. ground beef, take out of the pan, and leave some of the grease. Toast 1 cup rice in the pan with the oil. Add 8 oz. tomato sauce, 2 cups water, salt, pepper, 1 tsp onion powder, 1/2 tsp garlic powder. Add the ground beef back in, stir, cover, and cook for 25 min. on low. So YUM! Love your videos Brooke! ♥

Alfredo, bacon, frozen peas is a good one too. I always cook the sauce separate . Because mixed all together, and have leftovers the pasta absorbs all the sauce and it is dry. We add the sauce to the pasta then warm it up.

On the Spam, it is both a Hawaiian and Korean thing. It's an american product that became popularized in those areas due to our military being there. Became very popular in Korea after our soldiers brought it in. =) Spam, Kimchi and rice is a popular dish there and it is SO good.

We make musubi bowls - dice spam small and put in frying pan to get a lil brown, then add 2 Tbsp soy sauce, 2 Tbsp sugar, cook until sticky. Serve over rice in bowl, top with cut up seaweed or furikake. Especially good with fried egg on top

I’m 66, and 2 of my favorite dishes came to mind. They are both inexpensive to make. One is creamed eggs on toast and the other is breaded tomatoes (stewed type)

When out of sour cream, ranch dressing works well. Try adding some butter to the refried black beans & adobo, you’ll thank me.

You were both correct about the Musubi. It originated in Japan but the filling was whatever they wanted to put in it. It could be fish or other type of meat. Hawaii with their Spam obsession took the Japanese Musubi and made it their own. Everywhere you go in Hawaii you can find Musubi with Spam. Pretty tasty! Really enjoy your videos. Thanks for sharing.
