"Soba" can be used as an umbrella term for noodles with medium thickness as well, which means that Udon is excluded because they are thick, and Somen is too thin. When Chinese noodles were introduced to Japan, they were called "Chuka Soba", which means Chinese noodle because they had similar thickness to Soba, and they eventually evolved into Today's Ramen. However, Spaghetti or any other Italian pasta with similar thickness have never been called "Italian Soba" or European Soba." So Western ones are excluded as well, I guess.

When Ramen arrived in Japan from China, it was first called "Shina-Soba". Shina was an older term for China, so basically "Chinese Noodles". But as time passed they went into just calling it Ramen.

Aaaaah the mystery is solved! I'm sure you've probably mentioned it before, but I've noticed you tend to go with vegetarian dishes for preference, but occasionally in like the street food videos you'll eat meat. It's the pork you're avoiding, and having spent a fortnight in Japan I wakarimasu how tricky that can be. It's everywhere! I actually quite like pork, but it seemed whenever I was hoping for chicken or beef, it was barely on the menu, if at all in a lot of places. I somehow went the whole trip without finding a single chicken katsudon; it's my favourite comfort dish! Sidenote, just so happens I made it for dinner last night and I kinda nailed it *finally.* Sure makes a mess of the kitchen, though...

Yes! Other broth options include shio, soy milk, shoyu & miso. But there may still be some kind of pork extract in some of them (depends on the restaurant). Otherwise, vegan ramen options in Japan are super tasty too!

Ginza Kagari Honten make sensational thick 'cream of chicken soup' style ramen. If you miss out going there, don't worry as they have a concession restaurant in Narita airport. Fantastic ramen if you don't like Shoyu, Shio, Miso or Tonkatsu style much. Also, you may like to do a search for Halal ramen; one of the most highly rated ramen joints last year was a Halal ramen restaurant, so you'll be just fine. 😋🍜

I remember watching a ジョブチューン show once ages ago (when I could still find them on YT), Saizeriya makes their money basically through lowering their labor costs. Operations are remotely managed and there’s very minimal staff. Cooking requires the workers to put everything on a conveyor belt (like the fast food pizza ones). And every recipe is calibrated to come out at the same time.

The only chain restaurant I would visited in Japan is MOS Burger. Their Cheeseburger with beef (No Teriyaki) was the best. Orders are made to order, that means no infrared light keeping pre cooked food warm. This does mean that your meal will be very hot and needs a minute to cool off before you eat it.

for anyone in america there's 2 ichirans in nyc, they also have vegetarian and vegan options. Word of caution, the spice level goes up to 10, but that isn't a sliding scale of 1 being mild, 5 medium and 10 spicy. They recommend level 2 which i would say is a mild spice and just going up to 3 is enough to get your nose running. The numbers represent how many SCOOPS of chili you get, not the spice level. Sadly lots of bad reviews from people ordering ichiran as takeout who don't understand their spice level. I recommend +1 rich broth, 1 clove garlic, extra green onions, and level 3 spice, best bowl of ramen in my life!

I think that most Saizeriya locations are moving to tablet ordering. Just came back from a recent trip to Tokyo and the last Saizeriya that we ate at was the one in Kichijoji, next to the Donki. It was nice to see that they're making the change to digital and going away from the paper ordering system. The digital system also came updated with an English menu, which is great for those that haven't quite yet mastered katakana.

I've been to MOS Burger and Saizeriya, but not the other chains. I'll have to try the when I get a chance. One thing I appreciated about MOS burger was that they give you ceramic plates and stainless utensils when you dine in and disposable for take out. There was a Saizeriya near my language school where I taught, so I often went there on my lunch break. There was also a Chinese chain called Bamiyan that I often went to. I remember the first time I went there thinking it was nothing like the Chinese food I got back in the U.S., which then led to me realizing that American Chinese food might not be authentic to China either. I think a lot of times, appreciating restaurants like these is managing of expectations. Good on you for being so open-minded about it, Sarah! I hope you'll review Doutor in one of your posts. I was quite fond of their chocolate croissants. I'm thinking maybe you should do one video focused just on family restaurants. That's a whole genre in and of itself! Denny's (We have in the U.S.), Friendly, Gusto, Royal Host... I think Jonathan's is a chain in the Tokyo area? I haven't seen any in the Kansai region, but I could be mistaken.

Squid ink pasta came from Italy. I think it's called 'Spaghetti al Nero di Seppia'. I haven't seen it in Australia yet.

Great video! Always like seeing your adventures and new discoveries. I wanted to say (I'm not 'Man-splaining lol) as a hair stylist of 35 years, that in the icon photo for the video it looks like you have a very well cut chin length bob with an amazing color. Just a heads up, even though this style is an illusion in the pic, you look amazing! Mature, cool, and extremely hip looking. Keep uo the great work! Love seeing Japan from the Western point of view.

I love sweet aduki bean paste. I haven’t had it for ages - I got into the habit of making it at home, which is a little OTT (since it comes in a can at the supermarket). Also, I was eating so much of it - could not not get enough.

I miss the fall version of the Doria with sweet potato etc. so good! And we always got the cheap red house wine.

I tried the katsusando at Komeda's and it was really good. Ichiran Ramen was just average ramen for me, but it might have been because of my choice that day.

Hmm, I don't know if it's still there but there was a Mos Burger place at Garden City in Brissie, might have to try it if it's still there the next time I go.

Yeah, there's one at Garden City, Sunnybank Plaza and Australia Fair still. I'm pretty bummed about the Brisbane CBD store closing down. It was a nice alternative to Maccas and HJs. A casualty of covid and WFH no doubt.
