Cba rewatching to check, but it'll be something like a puree, like a pea/broccoli or beetroot puree or something. Could be a glaze or a jam too.

Well mold is the American spelling for mould(as in the fungus and the shaping thing). So mold/mould both spellings are correct.

A chef, who is a friend of mine, has 30 years of cooking experience.he plates everything up genuisly, like it is a work of art. And yet he has never used a plastic tube to spread some puree. I think that is definetly not needed
