✅Ingredients
• 1 cup creamy peanut butter
• ½ cup granulated sugar
• ½ cup brown sugar
• 1 large egg
• 1 teaspoon vanilla extract
✅Instructions
1️⃣Preheat oven to 350°. Line a large baking sheet with a silicone baking mat or parchment paper. Set aside
2️⃣ In the bowl of a stand mixer or in a large bowl with a hand mixer, beat the peanut butter, white sugar, and brown sugar together on high until creamy and smooth, 2-3 minutes. Add the egg and vanilla and mix until combined.
3️⃣ Using a heaping tablespoon, spoon the dough and roll into 1 1/4-inch balls. Place on prepared cookie sheet and place approximately 2-3 inches apart. Use a fork to press the cookies down, creating a cross-hatch pattern.
4️⃣ Bake in the preheated 350 degree oven for about 8 minutes.
5️⃣Allow cookies to finish cooling completely on baking sheet before removing. Store in an airtight container.

I have made these cookies for 30 years for my friend who suffers from Celiac Disease. It is a wonderful cookie that she can enjoy!❤😊
Funny thing is you can actually just use the peanut butter, eggs, and sugar and they still work.

Adding butter, flour, and baking soda will make these turn out much better, the flour adds structure, the butter adds fats and creaminess to complement the peanut butter, and the baking soda provides a leavening agent so the cookies are more soft, and airy

Thank you I love it, make it with my son and add some oatmeal and chocolate chips ( less sugar do 1 cup is to much) 1/2 is better easy and quick ❤

I use jif crunchy peanut butter cuz if you want peanuts in your peanut butter cookies this is the best

I did this recipe and it makes it more of a cookie brittle. If you want cookies I would say to add a half cup of flour and butter

Never let them cool completely, always and I mean always, eat a warm one.
Pet peeve of mine is saying things like this recipe yields X amount of cookies … yea if you make them the size of a half dollar! Come on don’t say makes 32 if you only get 20 cause I want a cookie that is the size of my palm not a quarter lol these I will be trying though cause I love my peanut cookies more soft and creamy than crunchy and sandy.

If you make cookies too big than you’ll wanna bake them longer so they aren’t too soft in the middle, the reason most recipes call for 1 1/2-2tbsp sized cookies is because they turn out more consistent and aren’t raw in the middle and burnt on the outside. If you really want to do big cookies that much though, have the oven temperature lower around 325-350F so you don’t have the problem of them cooking the outsides but not the insides

Roll the balls in sugar then bake. Once it comes out of oven, then mash with fork or add a Hershey kiss and push down.
You really only need 1/2 cup sugar. Most recipes do that. 1 cup sounds way too sweet but I guess do as you wish.

Peanut butters in the us arent as sweet as other countries
There’s nothing wrong with “natural” peanut butter. It doesn’t have any extra oils added like commercial peanut butter brands like Skippy and Jif that add unnecessary ingredients such as soybean oil.
I add bisquick and coconut to mine also.

I know this was a month ago, but the reason why is because natural peanut butter has more oil, and hence needs less cooking as it spreads faster.
I love unnatural peanut butter made of peanuts 😮

I just made these and we're so disappointed. I had to fix the rest of my batter and found out they needed flour, shortening, salt and baking soda. Now, if you're on a low carb diet and do not have Victoria's low carb flour, then wait till you do. Because if you're craving peanut butter cookies you will be missing something.

If you try to remove the cookies before they cool they'll fall apart, also leaving them on the hot pan ensures they're fully baked without overbaking and drying out.
WHY WOULD I CHOOSE A PEANUT BUTTER THAT HAS THE BAD OILS ADDED TO IT OVER THE NATURAL PEANUT BUTTER ?
