Here are four different ways you can Thai-up your leftover Christmas roast, whether it be roast turkey, roast beef, or perhaps roast chicken since we're going to have smaller gatherings this year. You can even try these with your roasted veggies too! This of course would work for Thanksgiving turkey, or even a steak dinner on a regular night :)

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZread channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZread videos, her cookbook, and cooking classes. The text overlays are amazing.
I'm obsessed with P'Art's editing. This surely brightens the whole video in addition to P'Pai's liveliness. I also notice the change from kaffir to makrut and after some Googling I think it is a small but great gesture from Pai. And makrut is more traditionally Thai anyway. I don't know if the change is closely associated with what I've found but it would be awesome if it were.

In college I would order Tom Kha basically weekly from my favorite Thai restaurant and they would put tomato in it, loved it!

In south east asia leftover rice almost doesn't exist cause our mom gets angry if we leave some 😂

Mine guilt tripped me by bringing up the poor farmers who harvested every grain until their backs ache to feed us. We do not insult rice farmers by not finishing our rice!

Sometimes I cook extra rice so I have some leftover for fried rice, or quick congee (I'm impatient to make congee with uncooked rice).

Thanks for making these recipes! I live with my dad who doesn't like Thai food (I know, he's missing out on so much!), and I absolutely love it, so these recipes will be helpful for me to still enjoy Thai flavours even when I've cooked roast meat for him :)
All good stuff! I will probably make one or two of these with the turkey left over. And maybe a som tam as well. But two versions, one spicy for me and one lame for the rest of the family ;)

This is great! After Christmas people always have too much food left over but are sick of eating Christmas food. My parents always saved a package of crayfish to eat after Christmas because thet wanted to have something that was totally different from the Christmas stuff (in Sweden crayfish is associated with late summer).

@@PailinsKitchen 555. It's too much work peeling them. My dad used to say "You can eat crayfish until you starve to death". You receive less energy from eating them than it takes to peel them. 🦞

I, a Filipino, agree with you, that rice doesn't have to be cold to make fried rice, as long as its not too mush or moist.

Tomatoes (and/or its puree), coconut milk, onions, garlic and pasta make a great dish. I got this recipe from a dieting app that I used a few years ago. I've forgotten the dish's name, and the app said it's Jamaican. Can any Jamaicans confirm this? There's a Japanese dish called oyakodon ("親子丼", literally "parent and child rice bowl") that has chicken and eggs in it. Try it and maybe make a video out of it.
While watching your video I thought I might just make a Tom Yum for dinner tonight. But then I heard the command "No buttons allowed"! There goes my dinner. 😞🤣 Love your videos, Khun Pailin!

I remember a famous chef several years ago on a TV show say, "...any mushrooms...except button mushrooms, because I hate them." I want to say it was Jamie Oliver (destroyer of Asian cuisine), but am not 100% sure.

I'm trying not to eat rice at the moment so can't add to the laab but I wondered your opinion on using ground up toasted sesame seed as a substitute?

I also hate button mushroom in Tom Yum Soup but if there are some slices of this mushroom in carbonara, it would be great.
I just made the Chicken Laab. My wife felt it was too salty, I know better I should of halved the Fish Sauce at least. I enjoyed it… something different. Recommend for those that will make this recipe… just add about the amount ground rice that Pailin did… I added quite a bit to my second bowl… it was too much.
My favorite when I go to Isaan is Tom Yum with Fresh Baby Galangal. When it is young, it is tender and can be eaten.

Awesome video! The video style seems different... And not in a bad way! Anyways I wanted to ask, I went to a Thai grocer today and asked for palm sugar. Instead of the dry stuff you use, she gave me a bag of paste and said this was palm sugar. Is this a different style? Does it still work in a mortar and pastel?

I learned: Tom Larb Pad Jaew *Larb- Toasted rice powder served right before salad is eaten *Jaew- Tamarind adds depth; Palm sugar -4- authenticity, served w/sticky rice 👍 *Pad- rice can be fried straight 4m pot *Tom- Trinity (galangal, kefir, lemongrass) ***And NO BUTTON MUSHROOMS!!! 😝✊
