    One thing I've discovered, when cooking meat, let it sit for about 15 min after it's done before releasing the steam. When you do a quick release it tends to suck the moisture out the meat even when there is a lot of liquid.

    Yes❣More experienced cooks know the value of "resting" meat before slicing. Newbies like myself are leery deviating from recipe instructions, but allowing the IP to sit 10 or so minutes before releasing vent makes a major difference in meat & fowl moistness. ⚠️You just need to factor that in the overall cook time 🕰. When you're cooking other dishes, you want final times to all complement each other. 🦉word to the wise🦉 in addition to resting & actual cook time, IP users need to factor in the time it takes for this brilliant appliance to reach pressure (before it starts cooking). That can vary depending on IP size & contents - taking from 10-20 minutes too. ⭐TIP: to cut down that time, zap your water, broth or stock in microwave for 1 minute before adding to IP. (Or, if I steam veggies, I will instantly reuse the hot water. After removing that steamer basket, I will immediately lower frozen chicken breasts on their rack into this same water.) Either of those easy steps will greatly reduce the time needed for the initial pressure stage.😉

    To avoid the "gym sock" effect, allow human meat to rest 5 minutes after natural release and then quick release pressure for optimal tenderness

    My grandma would say, mix that flour with some cold water and shake it first to make a smooth slurry. Add that slurry to your broth to make the gravy... then no lumps. Thanks for putting this up! I'll definitely make three of these for the girls. Much appreciated.

    Just a hint on thickening stock for gravy. Don't add flour to hot liquid. Mix the flour with cold water then add to the hot stock while stirring. You'll avoid those flour balls and get smooth thick gravy.

    corn starch and cold water to make a slurry, equal parts of flour and fat to make a roux, flour needs to be cooked or it has a "raw taste"

    These look fabulous. I learned a trick recently that has made me very happy. I hate hand pulling chicken with forks and someone showed me that if I just use my hand mixer, it will shred it perfectly in 20 seconds and they were absolutely right!

    Love all these! One thing my husband does it makes Bone Broth in the Instant Pot. We store them in mason jars in our fridge and use that as our base for soups or to add them to recipes. Look into it. SOOOO worth it!

    @@lauriefunke9895 I cook bones for 2 1/2 hrs on the soup/broth button. This button deliberately brings the broth up to a low temp, not boiling, until the end of the cook. You can use it to cook dairy without it curdling.

    @@lesliea.7174 If properly sealed (it will pop when you open it if sealed correctly) it usually lasts us 3-4 months if we don't use it as fast. We usually have it 3 months the longest

    Love the risotto! I got my first pressure cookr at 62 and haven’t looked back! Someone may have told you this by now but there is no need to slice the onion horizontally. It is already sectioned naturally and it is an easy way to cut yourself. Try just slicing it downward onto your cutting board and you will never go back to slicing horizontally (toward yourself or the air). It works fine, is safer and teaches others to do it safely too! 😃

    Great videos and recipes, just a note that when you take the lid of the IP instead of putting it down on a counter top it has been made to fit into the handles (either side), then the juices will run back into the pot and saves up on cleaning the countertops too. Thanks for sharing.

    Thanks for sharing! I like adding my flour to some cold water and whisking that together first before adding it to the hot beef broth, that way it doesn't clump up on you, just a tip!

    To avoid clumping when making the gravy for your pot roast put the pot on saute, mix 2 tbsp of flour and 2 tbsp of butter in the pot then add the sauce back in. Love your recipes and cant wait to try them all.

    That or mix flour with some cold water before adding it to the broth. Yours works even better, but the cold-water-stirr is quicker.

    Chicken tortilla soup has always been a favorite and has a special place in my heart, my mom used to make it and now I make it for my children. We love to add a little frozen red chiles, they're already ground up and peeled so they go perfectly! Adds a deeper flavor if youd like to try it sometime. Thanks for these recipes!     I bought mine right before Christmas last year. I am so used to cooking the regular way that getting used to cooking in the instant pot it’s being more difficult than I thought it would be but I keep trying because cooking 3 or more meals at day it’s tiring and time consuming for sure.

    Yes❣ Great that she uses a spoon to vent too. I use a pair of ✂️ (that rest on a magnet rack next to IP) to shift vent to open. I also double up a paper towel to safely redirect the steam a bit. (Not a smart idea for steam stream to be directed toward spice jars that can become moldy w/close exposure.👎) 🦉word to the wise🦉 Dishes like pasta can produce a frothy steam. Let a bit of it escape before turning on full vent or a starchy wet stream can leak out. If that happens, be ready to soak it up w/a bunch of paper towels (or tea towel) before it goes all over the place. It is🌡hot, so maybe use tongs to hold towel to dab moisture as it erupts to limit the mess. It's a pain to clean up, but a mixture of white vinegar & water will remove any starchy residue from exterior of machine or counter.😁

    🛂 Proceed w/caution. It's easy to become addicted to your IP once you get used to it. 😁 ⏳Our electric stovetop takes forever to heat up. Between our 3 qt IP & brilliant induction cook-pad, we hadn't used it to cook for well over a year. 🍚 The range came w/a double oven too. In 7 yrs, we never needed to use the large oven. The lower oven stows heavy cast iron pots that we use mostly for baking. 🔥The stovetop has become a staging area for hot dishes as well as workspace for using small appliances like IP, sous vide, slow cooker, rice cooker, waffle maker, etc. It even works well for standing mixer, esp. when making pasta. (BONUS: It's a totally flat surface that can take high heat. Plus, the dial controls are safely in the back, so there has been no danger of turning a burner on by accident.) 🍲We make multiple courses w/1 IP for a single meal, but it can be a logistical nightmare having to plan who got to use it first. Plus, a pain to wash between recipes. We thought about getting a replacement insert pot to make that easier, but in the end elected to go for a 6 qt IP. Although only two ppl, we love big batch cooking & leftovers. With the slow cooker feature on the new Smart model, we finally decided to donate our beloved vintage 70s hand-me-down. It was a workhorse that seemed to cook better than many newer appliances we had bought, but it was not sad to see the brown crock & ugly mushroom design go. We kept our rice cooker bcos it's still in regular rotation.
