    That stained pan is crying to be cleaned with "Barkeepers Friend" cleaner. It works miraculously, and the pan will always look brand new.

About 15 + years ago, before all the YT videos on the “ Mercury Test” and how to care for stainless steel pans, I bought a $300 pan from an old patient of mine at his kitchen store. He gave me a bottle of bar keepers friend. I was so pissed at food sticking and clean up, I gave the pan away.

    Though if you add something(like mushrooms) you just rinsed off and even dried with a towel, even bringing them to room temp, you will get oil splashing everywhere. Works well for foods with medium to low moisture.

    ​@@commie281I saw videos showing cooking mushrooms in a stainless steel pan with no oil or butter. It didnt stick and cooked well. But I get your point. I've seen others saying you can turn the heat down to whatever you want after the oil has heated as hot as the pan. I've never tried so only passing on what others have said. I feel like every video leaves out an important detail... If only Julia Child wanted to use less butter she would have given us the most detailed explanation on the planet 😂

    And for say searing, use oils with a high smoke point like ghee, avocado and grape seed to which you can add some butter for flavor. Olive oil, particularly extra virgin, has a lower smoke point.

    I like to sauté onion and tomatoes first before adding the eggs, I do all those steps and the sautéing doesn’t stick but later when I add the eggs it sticks! Any tips?

    It is an oxide layer and indicates the pan has been over heated. It is best to remove it to keep rust away.

    What if you just cook with butter or lard? Does the same concept apply as if you were cooking with oil?

    For butter and lard you just need to lower burners after adding the food, I like to lift the pan for about 15 seconds so it cools down just a little bit. If you like cooking with butter, I suggest you try ghee, similar flavor profile but much higher smoke point than butter so it won't burn as easy, you can even try making your own ghee with your favorite butter brand.

    I'm having really bad luck with my pans. The color turns from the heat and the food burns, especially my eggs. But when I lower the heat the water test makes it seem like it's too cold and not ready. What am I doing wrong? The pans are still new but look like they are 10 years old.

    It depends on the quality of the pans. Tri-ply work very well.

    Medium heat ✅ Bead Test ❌ ( her pan was not ready; wait until the water droplets move freely around the pan and don’t explode or evaporate) Oil ❌ (add your oil after you reached the perfect temperature and wait until it “simmers” (not popping; you will see simmering lines from the oil; add your food). Seasoning ❌: SEASON YOUR MEATS!😂 These pans are all about temperature control. I am no expert, but please go and practice and get to know your pans!

    I use butter, as well, once pan is hot enough. Butter doesn't burn and food doesn't stick.

    The sauté pan/frying pan stuff makes sense, but how would you use a stainless steel saucepan to heat something as innocuous as a tin of baked beans etc?

    Hm. Put the can (previously opened) onto the pan, vertically. Around put water. Turn on heat. Ta-da! Water heats= the can heats. Maybe a way to elevate the can from direct heat of the pan would be recomended (to avoid burnt beans on the inside of the can).

    Stuff like veggies and beans don’t stick much and you might not have to have it that hot like eggs. Eggs and other things are very sticky.

    Don’t forget you need to wait to add the oil until the pan passes the water test. Never add oil to a cold stainless steel pan.

    You should try the wooden chopstick method - look it up on here “chopsticks to test oil heat”, you’ll see what I mean!

    Smoke point is key. Then let the oil stop smoking. Put on low heat and test a pinch of food or egg. Then add all of your food in at once

    So if I am to cook meat at medium high temperature do I first heat up with medium,do the water test, then if it’s good then add oil, then switch to medium high heat and cook?

    Have tried all the tips to keep eggs from sticking to my stainless steel pans over and over and it rarely works. It takes so much trial and error and when it doesn’t work, the cleanup is time consuming. Very frustrating.

    There's little crevices and pores in a stainless steel pan, only observable with a microscope. They retract/close when temp rises and loosen up when cold. Stuff will get stuck and burnt in the pan if you add them when those pores/crevices are not closed yet.

    I heat the pan to the smoking point of the oil but then my pan burns and the chicken is burnt on the outside and raw on the inside.

    burnt mashed potatoes in a quart sauce pan. The pan is now blue at the bottom. Is it ok to still heat a can of pees, corn or even instant potatoes again. It kind of looks like your pan

    It's a stainless steel pan, there was never a coating on it M8. There are other pan types besides Teflon coated ^^

    Steel will turn that colour if you get it hot as hell. but I don’t think it changes anything. I heard vinager can get rid of the rainbow.

    Put some vinegar and baking soda in the pan and heat up for 5 minutes and that discoloration will disappear in your pan

    I do none of that. Full heat with zero oil, the pan's already been seasoned and prepped when bought, despite it being black as night now. Then with a little oil the smoke alarm goes off after a minute....bingo! We're ready to rock and or roll.
