This baked Char Siu Bao recipe is based on one of the best Chinese dim sum restaurants in NYC called Hop Shing. This is an easy hand mixed recipe that makes 8 delicious BBQ pork buns for yourself. Or to sell overpriced to your friends and family.

No worries about your stove - usually mine looks like that, too. Alice, on the other hand, is as cute as they come! Wally - can you show us how lobster sauce is made? I'm not even sure if it is real Chinese cuisine or not but my wife loves shrimp with snow peas in lobster sauce.

Looks like restaurant buns! 🤤 I used to swoop these baked buns up before work from Great NY Noodletown. Cheap, easy to transport in backpack, and delicious!

Gung Hay Fat Choy ❤️🙏 Tye yes I can, but I was thinking about doing Lo Mai Gai but I can't believe I'm having a problem sourcing lotus leaves here. There are lots of lotus leaves here I suppose I can dry my own but don't know if there's a process to it. So I'm currently researching that. Thanks for the patience 😆
i grew up in Chinatown and lived there 50 years. Hop Shing was one of my favorite places.

Hop Shing got closed later summer 2020. Really sad this happened 😩 Lots of hard working people in that restaurant jobless. Was one of my favorite places as well. Which is why I wanted to do make this recipe some justice. But I think they used lard which I'll try next time. I just prefer taste of butter. Thank you for watching Dee, take care!👍

Thanks Thomas! I really miss American BBQ and all the amazing side dishes like Mac cheese and cornbread. Maybe one day I’ll make some pull pork ribs and wrap it inside a Chinese style bun 😆

Wally i've been to tokyo and seoul korea and bejing and all over the philippines through our church , i play music it was just a little tour we did 3 years ago and i wish we played in thailand
Hey Walley, I am a very recent (sober) subscriber. My first Char Siu Bao was on Mott St. My favorite nostalgic NYC Chinatown restaurant was Wo Hop's, the upstairs street level, and usually at 2am. Was introduced to my second favorite dumpling there, Suey Kow. Maybe you can make those for us. All the best.

For the bread... can I use AP flour, and regular milk? I also don’t have cake-flour atm... but I remember I could sub it with AP with cornstarch added, iirc.

Yup should be fine with AP flour. Also making own cake flour will be alright ✌️
Can you steam instead or is that a different dough?

Can I use cornstarch instead of potato starch

Yes you can, no problem at all 😃 I used potato starch cause that what I have the most on hand. Otherwise I could’ve used corn starch.

I remember Hop Shing in Chatham Square!!I I thought they had the best Baked Char Siew Bao. Mei Lai Wah to me, overrated.

Yes! So my char siu bao is based on hop shing. I couldn’t get my oven hot enough to brown the tops like hop shing. But my char siu filling recipe is spot on. Also I could be wrong but I think they used lard. Yeah to me Mei Lai Wah is dryer. Hop shing is more moist and tender definitely a bit undercooked but in a good way.

Hmmm good question. I mentioned I suspect Hop Shing used lard. Not sure you know this or not but lard is widely used in bakeries, it’s in pie crust and makes excellent biscuits. Lard is dairy free. I believe there’s soy milk powder these days.
