Can not wait to make that first vegetable paella! Also, I MUST say, I absolutely LOVE your precision in cooking; it appeals to my truest nature. -- By the way, round rice is more like short grain rice, than medium grain. I have heard you say medium in several videos. Hope that is helpful.

superb 3 marvelous recipes in veg version which are full of Spanish flavour ,can I replace fish broth with veg stock and fish with cottage cheese

Yes you can replace the fish broth for veggie broth, you can substitute the cod for either tofu or seitan, if you want to use cottage cheese I would add it at the very end, much love
