Why exactly Monks counter Conquistadors but Janissaries are considered to hard counter monks? Is it solely because of range? I see that Conqs are more expensive and Janis have more range (8 vs 6 against monks with 9) but Conqs are faster too so they catch monks very quickly.

That extra two tiles can make a huge difference. That also helps you spot them earlier and avoid them. In addition, Janissaries are created in 17 seconds (includes the Turks' team bonus of 25% faster gunpowder unit creation), as opposed to the Conquistador's 24 seconds creation time.

why do the trees look farther apart in the new aoe2? like the original one had forests that were big clumps of trees. these ones look far apart from each other.
