this shop operate by their own chicken product factory then whole chicken price will be cheap. may 2022 fresh whole chicken = 100 baht

The first reason is too equalise the charcoal temperature. The second and main reason is to cover up any direct flame from the charcoal. The third reason is any oil or fats dripping down will be absorbed by the ash and not flare up and burn your food.
