I wonder if a business like this would thrive in places like the US or western europe, I imagine people choosing not to pay would be a large issue to be honest.

I know exactly what you mean, I was thinking it would be great if they had some in the US, but then I also know that people would absolutely steal or make a mess of the place. Maybe someday!

I prefer noodles without broth. But this one looks so delicious and how you presented and shared it. Also, I don't know if it's the lighting or not you're looking so great!
