    You are definitely not the only one with coconut issues - it's pretty common, so I try to always provide alternatives for that reason. Enjoy!

    Great idea - I should do an update! However - I do have a video here where I talk about them - it's from 2018 but I'd still recommend these books (esp Healing Kitchen). kzread.info/dash/bejne/d5lmkteaicfMe7A.html (Note that the one by Rachel Bryant is now just called The Paleo Healing Cookbook - it removed the "Nourish" part)

    Good afternoon Michele. I just started following you and love your videos. I tried to make the crispy waffles but didn't have coconut flour. Instead I used Cassava flour. They came out gummy. Is that because of the substitution? I love the crispy outside but the inside was not good. Next I will try the Tigernut waffles.

    I typically either use maple syrup or some sort of nut butter. But I also will make some of this berry sauce if I'm feeling fancy :-) thrivingonpaleo.com/mixed-berry-sauce-paleo-whole30-aip/

    I am new to AIP. I have researched it for the past 2 years. Right now I eat a limited variety of foods, so I'm not eating the calories I need. Can you make a video of several high calorie meals? About 500 or more

    It sure does! I wouldn't do the crispy one as pancakes, but the tigernut one is great as pancakes.

    Do the maple syrup raise blood sugar?

    Yes, maple syrup will definitely raise blood sugar. This is not really a low-carb food and if blood sugar is a concern for you, I'd either limit the consumption of it or skip it altogether.

    I tried every AIP waffle recipe I could find, and without exception, they all came out gummy, so I got rid of my waffle maker. 😔
