Making expensive food apparently just consists of throwing a couple expensive ingredients together, not caring for how their flavors work together and covering it in 40$ worth of edible gold. Also, foie gras is gross both in taste and production, and I'm glad producing it the traditional way at least is illegal in so many countries, even though selling it isn't.

There's a less gross method where they just offer TONS of food to geese that get ready to fly south and eat a lot to have energy, killing a bunch of them each year, but that's rare and expensive. The force-feeding is just cheaper. So I'm glad we don't have it here, even if we HAVE to have it sold here because of some weird EU thing.

The most expensive is pule which is too crumbly to be an ideal pizza cheese. Also it's rather mild so it would be overwhelmed by the truffles and fois gras. Anyway, you can't buy any, all of it is spoken for. You have to order pule in advance and then wait for it to be produced because they can only produce a little bit a year.

i just made a cheaper version at home. I used sharpie ink instead of squid ink, and swap the gold leaf for crumpled up aluminium foil. It was delicious
