We inherited one from my mother-in-law and all we ever did with it was cut french fries. We didn't have the instructions so we never thought of using it for anything else. It's just as well because it doesn't seem to be that great for anything but potatoes!

Depending who you ask, mirepoix can refer to a brunoise cut. And mirepoix should always be brunoise, as it serves primarily as a source of flavor. A rough dice doesn't have enough surface area. If you want big chunks of your vegetables, add them in addition to your mirepoix.
For a two-step dice, make slices first then turn the blades so they're crossed. The slices will then get cut into cubes.

It would work for mini cubes... One slice for thick slices, then stack those slices like a pack of cards on the crossed blades, push and you have mini cubes!

Oh wait... No, Emmy's right. You can't do a two-step mini cube, because both grates are in use, placed in parallel, to make a thin slice, as opposed to a thick slice...

My mom is 81 and has Alzheimer's. Sis and I take care of her and dad. She can be chatting away and then grab you and pop you hard!! They don't always get weaker. We quit crying years ago and just laugh at all she does. It's easier.
my mom had one of these...you dont have to pick up the veggies and re slice them to make diced veg...turn one of the blades 90 degrees and you can dice in one step

@Nathaniel Them things really work great i have one i cut fries with it and slice potato's for frying and nice to have all the same thickness and so fast also.
You brought back memories 🙂 I was curious to how sharp it had to be to slice and dice so I rubbed my finger across the grate and in a instant I had a freshly sliced hand😂 that was the last time my mom let me near it to help with fries

Oh man that brought back memories. I'm 56 years old and we had one just like that when I was growing up. Ours didn't get stuck like that. ( on top ) the key is to go really fast. I loved using ours. Over the years I have always wanted to find another one.
Years ago my mom talked about my grandmother using one and she said she wished they had products made like that now. I ended up finding her one on eBay and she was so excited. Said it was still super sharp and made prepping so much faster.

My mom had one of these when I was growing up! It worked great for French fries and cubes for potato salad. I wish I'd had gotten it when she passed. Brings back lots of memories of helping mom in the kitchen! Thanks!
Loved this, it brought back wonderful memories. We had an older version of this when I was growing up. My parents purchased it in the 1960s. It is how we made french fries, diced potatoes, and sliced potatoes. We didn't use it for other veggies or fruits, just potatoes. It getting stuck was a common occurrence.

Emmy you're so close to one million subscribers! You got this! Plus you work so hard and very entertaining.
We had one and I used it for everything. I loved it. It was passed down thru 3 generations. It finally fell apart 😢 Now I have this thing, same concept only it is attached to a heavy duty bowl so things go right in it. It comes with different cutting blades and things and lids, 3 bowls & 3 lids, plus the cutting lid you just remove when you're done and put the regular lid on. Very high quality material.
My mum had one of these. She used to use it to make chips. I can't remember her using it for anything else but I do remember how thrilled I was when I was promoted from peeling the spuds to using the Veg-O-Matic. The thrill lasted for the first two times I used it, but it really did speed up cutting chips, even though it cut them thinner than we were used to. Our family ranged in size from six to fourteen, as we often had cousins, grandparents and the like living in one house, so this really was a time saver.
I'd love to see the shaved ice maker! I know it's winter, but the Japanese are so inventive when it comes to handy gadgets!
My mom has one of these still in her cabinet at home. 😂 I hated using it growing up though because it’s sort of rusty and it always got stuck on me.
We had one of those and put a lot of miles on it. It looks flimsy, but was surprisingly durable. We had a big garden, almost an acre, and my mom canned and froze a lot of the vegetables. This was before they had food processors. If you wanted to grind something, you used a hand crank grinder that clamped to the edge of a table or counter top. This was the only thing around that would slice, other than a knife. We used it to slice cucumbers for pickles and carrots to freeze. When you're canning pickles or freezing carrots by the bushel, it really did save a lot of time. Eventually one of the blades broke, but I found another one in a junk store.
I remember being so happy that I saved $8.99 to get my Mom one for Christmas 1966. She us only 4 foot 11 inches and could not push it down even standing on a stool. My 6 foot 4 inch Father had to do all the cutting for our night of french fries. LOL my Mom and Dad still laugh about my excitement of getting her this. Thank you for bring back happy memories
I have an old gadget that I took from my mom when I moved out 10 years ago and never used it haha it's called. A tater twister. I kinda wanna bust it out now.

Wow!, it looks like a prop from old Star Trek, and yeah you have to use some force, then pick up the pieces of carrot from each corner of the room!
Boy, this was a blast from the past! I truly enjoyed the memories. We had one from the mid 60s and I remember making french fries. Put the potato on the screens, push down a little to set it firmly on the top and WOOMP!!! I loved it at as a late pre teen, early teen ager. I never remember it popping loose and sticking to the top though. We had it for years and years but I don't think we used it much after the 60s.

When I was in college I worked in a chain restaurant, and we'd use a machine similar to this to make the hash browns. Steam the potatoes then push them through a series of wire frames. My fingertips were shredded, too, until I discovered the Kevlar gloves.

Breda Fallacy we still use one of these in prep. But it's so much more heavy duty and mounted on the wall. You can't really hurt yourself on it unless you try

Made a lot of tomato soup with one of those things in my day -- now I just use a good, really sharp knife.
Mommy had one she got brand new before I was born. I watched her use it and later learned how to use it myself... Such fun memories!
Ugh! Brings back many memories! My dad used to make us kids cut the potatoes using this so he could make His French fries with hamburgers and Sunday breakfast potatoes. The dicing process was difficult so we just ended up using a knife to finish the dice on the French fry cut to do the country fried potatoes. He liked them small so they would get crispy. I don't really miss this! LOL I am also reminded when I go to In n' out!! Thanks for the blast from the past!

: ) my grandma's garden was a quarter of a city block. A lot of which required chopping. I used one of these many many many times : ) and pinched my fingers in the plastic edges. Thank you for sharing this! Brought back memories for sure!

If you sluced then used the french fry setting you would geta dice. A two step dice, maybe a bit bigger, with less effort overall.

Yeah, I don't think the large dice would've worked in the recipe, they would have been hard in the center.

My youngest brother saw an add for this thing and pitched a fit (while a K-Tel's greatest hits album was playing - oh yeah, we were 70s bad asses) until my parents caved in and went to Woolco to get one. As soon as we got home, the young terror decided he was going to chop every single vegetable he could get his hands on. The apple slices were good, so were potatoes and then he got a very ripe tomato (I quickly backed away as far as I could but could still see what was going to happen) and WHAP! Tomato goo all over the place with a screaming child in the middle of it - the Three Stooges couldn't have come up with anything better. A precious memory I don't hesitate to remind him of.
Omg, I’m laughing. I remember when it came out. Dad bought one for mom. It was the “coldest” Christmas ever. Lol! She was not amused. ;)

This is entertaining, Emmy but I am the knife and chopping block kind of cook. I'm not into gadgets, cooking or otherwise.
I have a vegamatic from the early 60's. They were at first, sold in department stores with live demostrations. these were the first informercial. This vegamatic was bought by my grandmother, when she died it went to my mother, then to me. It still works great.

Just about, Its a consumer vrs of a piece of restaurant gear. Dosn't make much sense for home use , unless you are doing a tone of canning or food prep.

As a child we used the Veg-o-matic the cube beets for canning. I currently use the 3rd generation to slice potatoes for raw fries and French fries. I love my Veg-o-matic.
I had that and used that as a kid, mainly for french fries. It was already old when we bought it but I didn't know how old. There were 6 of us and we were dirt poor and potatoes and onions were a staple. I was a very strong child and using it was fun for me. Refrigerated onions give off less chemicals.
Omg!! A flood of memories came back. I recognize the box. My great grandma had this machine!

you had to of lived through the years when you had no help cutting up fruits and veges only hand and knife to appreciate this. ron popeil will always be loved for the inventor he is. plus this got a lot of kids interested in cooking too bc now they could help in the kitchen. ty emmy very good test.

You are so adorable! Love your videos. I was born in 1962 and have a love for old gadgets and gizmos from my childhood. (And thrifting and vintage anything.) I remember using the Veg-0-Magic. Haha
I have the wedge insert! It was a stowaway in a thrift store cabinet purchase and I've always used it to core apples. Because if the shape I just assumed that's what it was. Not long ago I was looking at the writing on the rim and on the little box and realized it was a part for another machine/gadget - the veg-o-matic!
I bought a 1st generation veg-o-matic for my mother from Ron Popeil. He was doing a demo at Kresge's in Memphis. My wife and I love watching your demos.
My grandmas had the same one when I was little. I loved using it.
We had one when I was younger. All of us kids loved doing it. It worked great when canning.

Oh man, your whole recipe with the potato pancakes and apple sauce, reminds me of my grandmother that is from an island in the Frisian islands off the coast of Germany, and before WW2 they were able to make these German/ Swedish? Potato pancakes with the apple sauce. Thank you for bringing me back to my childhood for a moment
we used a similar product design when i did food prep. these machines tend to run a bit better when you pre-cut the vegetables to smaller portions. For example, I had to produce a bin about the size of the ones you use at the airport (whatever size that is) amount of small diced potatoes. it was much faster to cut each potato in medallions and then use the device, instead of dicing by hand. plus, it was very satisfying to do the aggressive push.
My mom had one of these and I have been trying to find something like it but never knew the name. I loved that thing!
My parents still have their Veg-O-Matic... and still use it! Works great even after several decades.

I am a granny and I loved, loved, loved my Veg O Matic. I would give anything to have another one, but they are hard to find. I used mine to make French fries.
