Leek, Potato, Bean, and Miso Soup
Ingredients:
2 small leeks, chopped small
3 medium potatoes, washed well and cut into small dice
2 sticks celery, cut small
2 medium onions, diced
2 cloves garlic, minced
1 x 400g tin butter beans, drained
2 bay leaves
1 tablespoon miso paste
1 teaspoon thyme, dried
2 sprigs rosemary
A few sprigs fresh chives or spring onion, chopped finely
700ml water
Salt, black pepper, olive oil to finish
Method:
Heat a pot, drop of oil. Add leeks, celery, onion, bay leaves, garlic, thyme, and rosemary. Cook 4 minutes, lid on until they start to tenderize, stirring as needed.
Add potato, cook another 3 minutes, add some water if the pan is dry, then add the miso.
Add 700ml water and the beans to the soup and bring to a simmer. Cook until potatoes are tender.

    Hey, like the channel, but wee but of advice, take the numbers away from the front of the title and add to end. People dont search for numbers when looking for recipes. They search for the food. Well, i do anyway. Will help with the views and subs
