Cajun Roast Cabbage with Lemon Red Lentil Hummus
Ingredients:
½ Head White Cabbage, cut into large wedges, and blanched and refreshed
1 tablespoon Cajun Spice mix
1 tablespoon Honey
2 tablespoons Olive Oil
1 tablespoon Apple Cider Vinegar
Hummus:
1 cup Red Lentils, soaked and cooked until tender
1 Lemon
3 cloves Garlic
1 tablespoon Tahini
30 ml Olive Oil
Instructions:
Salt and Black Pepper to season
