152. Fish & lentil casserole

Cooking an anti- inflammatory diet for my Arthritis:
Fish and Lentil Casserole
Ingredients:
2x170g chunky white fish (e.g., large hake)
1x400g tin cherry tomatoes
1x400g tin lentils
1 red chili pepper, chopped
3 medium potatoes, diced small
250g carrots, diced
1 small leek, chopped
½ celery stick, chopped
1 green pepper, diced medium
4 cloves garlic, chopped
1 teaspoon cumin seeds
1 teaspoon mixed herbs, dry
3 scallions, chopped fine
Seasoning:
Salt
Pepper
Olive oil (for cooking)
To finish:
Fresh herbs (as desired for garnish)
