Welcome to Feeding the Byrds!
If you need some last minute Christmas treats for Christmas week, these are so quick and easy and you can use them for any kind of gathering! We love quick an easy holiday treats over here, ones that we can easily put together when we need something last minute. Merry Christmas!
What's included in these quick and easy Holiday Treats Video:
Christmas Crack
-35-40 saltine crackers
-1 cup butter
-1 cup brown sugar
-2 cups semi-sweet chocolate chips
-1/2 cup chopped pecans (optional)
Preheat oven to 400 degrees. Line a 10×15 inch baking sheet with aluminum foil and spray with cooking spray.
Place your saltine crackers in even rows.
In a saucepan over medium high heat melt the butter and brown sugar and whisk and let it boil for a few minutes.
Pour. over the. saltines and spread out and bake in the oven for 5 minutes. Remove from the oven and sprinkle with chocolate chips and let it sit.
Spread the chocolate over the Saltines and sprinkle with chopped pecans and let it harden. Cut into pieces and serve
Dipped Crackers
-48 ritz crackers
-3/4 cup creamy peanut butter
-16 ounces semi-sweet chocolate or white chocolate chips
Make peanut butter sandwiches with crackers. Melt the chocolate in a microwave safe bowl. Dip each cracker in the chocolate and place on parchment paper to let them harden.
Buckeyes
-1 cup peanut butter
-1 stick butter softened
-1/4 teaspoon almond extract (or vanilla)
-2 cups confectioners' sugar
-2 cups semisweet chocolate chips or chocolate bark melted
In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. Roll into 1 inch balls and place on a waxed paper.
Press a toothpick into the top of each ball and dip into melted chocolate.
Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Refrigerate until serving.

-Melting chocolate
Melt chocolate and pour peanuts into the melted chocolate. Take spoonfuls and place onto a parchment lined baking sheet and allow them to harden.

When you make the snowmen instead of using a toothpick and having to worry about the kids, you can just use the same pretzel you are using. Either push one threw or if you need use a second one to extend it to make it longer. Just a thought. I love all of your ideas.

If you use pretzels, do you break them up first?
I top the peanut butter ritz crackers with Reese’s pieces. Kids love them. Or holiday sprinkles would add a nice touch.

For BUCKEYES, we add Rice Krispies, either crushed or not crushed, and it makes them almost like a Nestle's Crunch bar!

I add honey and just enough kosher salt to juuuuust taste it. you do have to compensate the honey with powder sugar, but they are so creamy and that hint of salt compliments the peanut butter really well.

Peanut clusters is correct. These all look wonderful. You are so resourceful. I do the chocolate peanuts, pecans and almonds.. I roast the pecans and almonds. The peanut crackers one of my daughters reminded me how much they liked that. We used the mini Ritz sandwich crackers which was super easy. I am going to do as your doing here. The pretzels I may do too. God bless all here.

I always make the peanut butter ritz dipped in almond bark. This year I bought a box of Ritz Bits dropped them into the melted bark. Out of the whole box there were only two I couldn’t use. They are a cute size and it took no time to make them! I make the peanut clusters too but use cashews, always a big hit! I like to melt chocolate add a few drops of peppermint extract and dip Ritz crackers, taste just like the Girl Scout cookies! Pretzel crisps are great for dipping, I only dip about half a crisp and then shake sprinkles, hands don’t get messy! Enjoyed your video as always!

For the snowmen, you could use a candy cane/peppermint stick instead of the tooth pick, that way as the marshmallows melt, so does the candy cane/peppermint stick which also gives the hot chocolate a peppermint flavor...we do tjat all the time. It's so yummy 😊

My neighbor calls it toffee & Ive also seen it made with chopped nuts scattered over the chocolate layer.
I make the Christmas crack but top it with crushed peppermints after spreading the chocolate. Or I use toffee bits other times during the year.

Hope y’all have a fantastic Christmas! I’m definitely making the chocolate covered peanut butter ritz. Publix had them on bogo last week so I’m stocked up. Those and the Bunkey ritz pie with whipped cream. And Mandy’s green beans will all be served at our Christmas Eve lunch.

9:20 Hint: when you are forming the biscotti logs, scoop the dough onto the parchment paper and then just wet your hands with water and then pat them into the logs. Much less sticky.

all fabulous, but just an idea, the cute snowmen, instead of using a cocktail stick in the middle why not use one of the edible sticks you used as arms and legs, then its safe and all edible .. from the uk x

I know it is really busy around Xmas but if people want to do themselves and the under-priveliged a favor then tidy up your home......I know it is too much to do it all at one time but today, for instance, I cleaned up my walk in wardrobe where I found toys still in boxes that I had as presents when my kids were invited to a birthday party at the last moment........My kids are now grown so I donated all the toys to a local charity shop and it's a win/win situation. They will pack them into hampers for needy kids and I have more storage space......There is also many shopping malls and other places where you can leave non-perishable food items that are packaged up into hampers for Xmas......My mom loves to give me packets or rice and pasta and cans off soup I don't need. I was able to donate all these so my pantry is not cluttered anymore and some families get a nice food hamper for Xmas.

Never thought of changing the crackers to Graham Crackers, but we do add some chopped pecans onto the chocolate tho!

Hmmm. The most we have ever made these ahead was about 45 min to an hour. But they are so cute!! I've heard you can use soda water to keep them from turning brown but I haven't tried it

I saw that you have a Kitchen Aid lift mixer. How do you think it compares to a regular Kitchen Aid mixer? I’ve been contemplating the lift mixer for awhile. Does the lift just make it sturdier? How does it work when you need to add ingredients as it’s mixing? Love all of your recipes! Thanks for the tip of adding the almond extract to the buckeyes. For the peanut cluster I add raisins to mine, too.

These are great questions. Honestly, this is the only one I've ever had. When I need to add ingredients, I just turn off the mixer and add and then start it again, unless its in a bigger bowl and then I lower the mixer to add. I really love it but I don't have anything to compare it to other than just a handheld mixer.
I sprinkle pink Himalayan salt on top before putting into the fridge

Mix a 1/4 cup chopped nuts into your Carmel mixture when you add the almond flavor. First recipe. Then pour over crackers. Another thing you can use graham crackers instead of saltines. Even better.

I bought the chocolate bark from Walmart comes in white,brown and I believe almond. I melted it in the microwave and then filled a baking dish with hot water and set the bowl into it. Kept it melted long enough for me to do a lot of stuff. I also dipped oreo's and put green and red sprinkles. Just make sure not to get water in your chocolate.
