I don't know why, but the thought of getting so clean and making something as happy and fun as cakes for a living doesn't sound too bad. I hope these workers live a satisfying life knowing they are bringing joy to a lot of people.

Beyond impressed by their cleanliness!!! This is my type of kitchen!!! I wish I could get my kitchen staff to be this Clean and organized!! Efficient, this professional and definitely this quiet!! I know it has to start with the company but the company clearly doesn’t like when new people come in and tell them that their operation is shit! 😍

very good sanitization measures but at one point someone sprays their gloves probably with isopropyl alcohol while they were over the batter.

You would have to be Japanese to understand this kind of cleanliness & dedication to the work. Thousands of years of tradition go into their upbringing.

I really loved the cleaning process of the employees shows how much they love and cherish their job and the customers 🥰

The only thing mass produced about these is the volume in which they're made! Lol!!!! Otherwise, all hand made. Even to the lightening the yolks before adding to the batter. Impressive. Absolutely lovely.

If I understand correctly, creaming the eggs and sugar in a separate bowl first, helps to aerate the mixture and give it fluffiness as well as removing possible grittiness from the sugar, before adding it into the rest of the mixture.

The reason is that if you put all the sugar in the cake at once, the egg foam disappears. This is why melted butter is added last.
