Lol no way! I literally just started cooking with these last month and found they work great for vegan fried chicken. I've been using the pre knotted, dried ones at my local asian market. This is my new favorite episode.

There's this "chicken drumstick" from a vegetarian restaurant in my hometown. The "meat" is made from gluten and the "skin" is made from soy skin XD Also fun fact soy skin makes a great gluten-free dumpling skin :D

This is one of my favorites! Plant foods are amazing and while we grow and understand what we consume, this dish shines as it is! Doesn't need to be contexualized by animals. I think this and reading in the comments gives me new ideas for cuisine, especially kinds that don't survive on emulation but thrive on ingenuity and a passion for flavor/experience!

Unimportant, but soy skin 'meat' is also commonly used to substitute duck meat because the more water it absorbs, the more tender it becomes, thus simulating a well steamed duck. Such substitution goes especially well in dishes like teochew braised duck, where the duck (in this case soy meat) is supposed to absorb the sauce, making the end result tender and bursting with flavor from inside the meat 🤤 literally my number one go-to dish in most buddhist eatery.

Well that would be cool! You could give them a seafood taste... they might be a little tough for shrimp in my opinion, but that doesnt mean you cant flavor them that way!

May I suggest: Slip sheets of nori between the tofu, and consider the Vegan oyster sauce as a brush on/between. Instead of tying them in knots, give a twist, and then cook as suggested. Toothpicks or butcher's twine (or hempen twine) might be needed, but I think this might work. Maybe drop them into some miso broth, to brine before cooking. Bring that funk, then bring the sizzle. If you try this, please let me know if it turns out well.

@Dorian Gray you are right, though. most of the "flavor" associated with meats and animal products in general comes from A LOT of seasonings, frying, sauces etc.

@Dorian Gray I'm talking these tofu sheets here, not plain tofu. But whenever I do tofu, I prefer tofu to tempeh. I tried tempeh just once. It was basically just rotten, moldy soy beans, pressed together (LightLife brand). I'd heard good things; meanwhile, it was disgusting. Regular tofu is essentially a Vegan cheese, as it's derived from a different way of fermenting, not whole beans, like tempeh, but soy milk. It's a great mozzarella or ricotta replacement. Flavored with whatever, it can be whatever we need or want it to be. If you do tempeh, good on ye. Please, let me know if there's something I'm missing. And please see me: I don't mean to be rude to you at all. I just was thoroughly disgusted with my one attempt at tempeh. If you turn me on to something good, I promise, I'll turn others onto whatever you say.

that's so cool! the way they look on the baking sheet makes me wonder if they'd work well as shrimp, because the edges could mimic the crispy tail, and you could soak them in a seafoody-flavor broth.

Really appreciate your efforts with experimenting as I imagine so much trial and error that we don’t see in this channel. Me and my wife have been trying to make vegan Yorkshire puddings tonight with little success... egg replacement in the uk is kinda crap lol

Yuba is amazing...first tried it in an excellent dim sum restaurant in Toronto. They deep fried slices of it and just went around offering it to your table...tasted so great

Watched this like a year ago, just found dried bean curd knots at H mart (Korean grocery store) and had to rewatch!
There was a restaurant in Durham NC, called Jack Tar. They did a vegan philly with tofu skin. Damn good.

I know bean curds. When layered and cooked once you bite into them, you call feel each layer break pretty solid between tour teeth. That is what Monica was talking about when she said its a little tough. I appreciate you trying new things and this will be great for some people.
I eat soy skins all the time and never thought of this! I personally love flavoring soy skins with chili oil, cilantro, and lots and lots of minced garlic!

Our local asian market did have the bean curd sheets! However chicken flavored broth is nowhere to be found (only stuff that contains egg and/or chicken). I guess I'll have to make due with some regular vegetable broth.

Hey my Asian World Market has that broth in a can, and I JUST saw bean curd skin there.... I was like hmmm wonder if I should use some. I have an idea for you! I buy this stuff called Verisoy, its from Vegusa and they make "beef" chunk's, and pork cutlets. I'd love to see what you do with them? I just rehydrate them and use them in stir fry, pretty good, and very fibrous.

In Israel you can buy these as dried knots! It always intrigued me and I wondered how the middle, thick, part comes out texture wise. I like buying them in a little chicken wings shape. Do you have that in the states?

You just blew my mind the time is 1:29 a.m. March 1st 2021 and you showed the chicken broth powder that I got in my cabinet that I get from the Asian store that I always shop at for my Korean stove supplies because we don't have electricity throughout our house and it's been a godsend for the last almost 10 years and it's not by choice it's just by circumstance y'all we would love to have a fully working house with fully wired yeah I digress but OMG I never knew that there was NO CHICKEN IN that chicken broth powder... Is there a way to make the yuba less rubbery in texture? Since it's mostly protein I wonder if fermenting or pickling might soften it up. Or just a soak in brine or broth...

In my experience there are some brands of dried yuba that just do not rehydrate properly. They remain tough and almost inedible. I'd go with the fresh or fresh frozen unless that's the kind that was giving you trouble.
