Having separate FOH and monitor feeds from a splitter is so essential and wonderful! I hate when band members get that confused and distracted look on their face when I start sweeping EQs, or start singing/playing different when I adjust gain. Problem solved. I give everyone an iPad on a mic stand mount, show them the basics after I dial in the gain and basic mix for them, and walk away. :)

Try to keep your peaks smooth, I usually try and use a few compressors at different stages of the mix, all doing a little bit. Comp over the LR doing a couple of db of reduction to keep it even. I've not really had to do that before, I don't think there is any real way to hide if someone is lip-syncing. Maybe you could side-chain the track channel to a gate that only opens when the singer actually makes noise down the main mic channel? and then keep the real vocal out of the mix, but then this would require the singer to still be singing loud on the stage.
