    Thank you! The toasted rice can be kept for quite a long time but I suggest not longer than a week since it’ll lose the nice toasty aroma :)

    Suggest use Sumenep Red Onion if you stay in Indonesia. Because Sumenep Red Onion is very crispy & could long last for a month maybe more.

    Had crab version in a Thai restaurant and felt it was relatively simple dish so made at home for a third the price. Easy and delicious dish. Nam prik Pao might be my new favorite fermented paste more than gochujang.

    Hi Pam! Please tell me, what the difference between fish sauce and Thai fermented fish souce?

  • @ThaiGirlintheKitchen
    @ThaiGirlintheKitchenАй бұрын

    Hello, fish sauce is more commonly used and fermented fish sauce(Pla-ra/Pla-deak) will be added more in Thai/Isaan or Laos food such as Som-Tum etc. Pla-Ra has a funky smell and tastes, full of Umami and salty flavors. Because of the smell, some people just totally don't like it. But personally I do like my Som-Tum with Pla-Ra 😋😊

    Regarding prik nam pla, should I let the chilli soak first in lemon juice or in fish sauce? The recipes around the Internet differ. Thank you!

  • @ThaiGirlintheKitchen

    Yes there’s several recipes for Prik Nam Pla. Some add lime juice as well, some also add shallots and cilantro, etc. In this recipe, there’re both lime juice and fish sauce and I soak the chili in lime juice first for 1 minute to keep the chili colors vibrant :)

    Growing up, I always made this with 2 eggs, 1tsp fish sauce and a tablespoon of water. Never used lime juice or a colander or even deep fried for that matter. Just a bit of oil on high heat, cut in half and fold both parts over like an omelet . Can't wait to try this version!
