Hi again! The per serving sugar amount is very low at that number (30g in the recipe). You could, if you'd like use 1/10 of a gram of stevia for the recipe.

What is the cure ratio? (Salt - 2.5%. Sugar - 1%.) But what is the percentage for the cure? If would differ if I was using a 4 pound (1.81 KG) or 5 pound (2.27KG) loin.

@PSSeasoning I think it's a mental thing. People forget that sweet and salty is super common, they are only thinking pbnj plus savory sounds weird. Peanut soup is a thing, peanut sauce that has umami, spicy and sour... plus how can we forget about fried peanut butter, banana and Mayo sandwiches? I've also heard of peanutbutter bacon and jelly..
