  Great theory, and I'm pretty sure most people, especially those outside of the main Cars Community will agree upon this theory and accept it. It also doesn't help that in Cars 3, we see Mary and John kissing on the bridge on McQueen's TV which is set in like a film or something, which makes me believe Mater dreamt that we got to walk through that scene in Cars 2 after seeing said movie. Also, COTR even further proves this theory correct with the brains on the B-Movie Cars which contradicts what Cars 2 gave us with Celine Dephare, and Mater wishes he could go faster than fast despite getting Rockets in Cars 2. ALSO, Mater is never called "Sir Tow Mater" again and his sister Mato gives no acknowledgement to what Mater did in Cars 2, further cementing it as a dream.
