I'm looking forward to making this delicious desert. I ordered my 3 Kunefe plates today and my Kadayif came yesterday. I have all of my ingredients except the Mozzarella cheese. I live in the U.S. but I love a lot of these foods I can't get here and have to make them myself.

It's much better if you don't wrap in foil. They'll become crispy rather than steaming in the foil.

What kind of rice should I use short grain rice, basmati?
We use short grain like Arborio rice, but long-grain rice works well too.

The peel is very bitter. Use less or take off the white interior part of the peel

Ingredients (13 pancakes) 200ml milk 1 egg Zest of 1 lemon 200g self raising flour (or all purpose flour + 1 teaspoon baking powder) 1 tablespoon sugar A pinch of salt A handful of blueberries Olive oil for cooking (1/2 teaspoon for each batch) Instructions: In a large bowl, whisk milk and egg, add in lemon zest. Sift in flour, sugar and salt. Mix just until everything is combined. Don’t overmix! Fold in the blueberries with a spatula. Heat 1/2 teaspoon olive oil in a pan. Drop 1 tablespoon of pancake batter in the pan. (We cook 3 pancakes at a time). Cook both sides until golden (about 30-40 seconds per side). Transfer them onto a plate. Add 1/2 teaspoon olive oil in the pan and cook another batch. Repeat for the remaining batter. Serve with berries and maple syrup.
