I hate when I'm in a restaurant eating with chopsticks and there's some moron staring at me while I eat. Just because I'm not Asian it doesn't mean I shouldn't know how to use them. Between 1976 and 1980 I did 2 tours in South Korea and learned how to use them the first tour using the flat metal ones. I can still pick up a grain of rice off the side of the bowl. I also dislike being asked how do I use them when you've been watching me for a while.🤦🏽♂️ My wife is not Asian and she uses them which really freaks people out because she has long fingernails. As long as a chopstick long.

This is like 6th video and I still have no idea how to do it, besides I strongly suspect that the techniques are slightly (or not so slightly ) different. And I have no idea how to hold a pen, but I never hold it like a chopstick apparently...

Then you position it badly - you need to rest it on the side of your ring finger's first article, right before the first joint. Also, the thumb should put pressure on the bottom stick, so that the ring finger and thumb work like a vice.

You just require practice. Try to put gentle pressure/grip with your thumb on the lower chopstick as that seems to be what most people find holding steady difficult. Still nothing beats eating with your bare hands (Indian here). When I first learned to use chopsticks (just for fun) the bottom one got loose after sometime of holding the chopsticks. After repeated use while actually eating (while doing normal things that I usually do like watching movies, taking to my friends) it got easier to unconsciously hold them up. You do need to just put them down & relax in between dishes/courses and just need to remember to hold it in correct form while picking food everytime just like a fork/knife/spoon. Sorry for the unwarranted advice 😁

You can try the alternative technique which is middle finger + thumb for the bottom one and index finger plus thumb for the top one. I find it easier like that - the sticks are always level and I get a firmer purchase, too, being able to pick up big and heavy pieces of anything :D

I use to have the problem of the bottom one always sliding out of place until I learned to use my thumb to put pressure on it, that fixed it and now I have more strength and grip when I use them

I've watched so many videos. I can never hold them the following the traditional instructions. I have figured out a way to hold them that is comfortable for me, however, I find I have no strength, or grip for picking up the food. I can't figure out what I'm doing wrong.

You might be pinching the fingers around the top stick and trying to raise and close it with all those fingers. The top stick sits on the top of the middle finger which raises (opens) the stick and the index finger lays on top of the stick where it lowers (closes) it. It's that index finger that should be pressing down on the active stick to get you a grip on the food. The thumb doesn't move much like it does for writing with a pen. Here, it merely acts as a buttress to keep the stick up against the middle and index finger. It moves just slightly and acts more as a pivoting point for the stick. When you master the technique you will see that the correct grip is very similar to the way you should be holding your fork and spoon. Chopsticks are NOT tweezers! I hope this helps. Oh, also note that she initially shows her fingers holding it like a pen, but then in the next cut she has slid the middle and index finder forward towards the point of the stick a little bit.

It depends on the length of your fingers, too. The way described here is not a good one for me. I opt for three-finger technique where my middle finger and thumb (the lower part of the thumb) are in opposition holding the bottom stick firmly in position and then using the index finger and the top side of the thumb to operate the top stick. I get a much firmer purchase like that.
