That is very interesting question. I have never tried using the fruit instead of the fruit juice. Although I do know that they use a similar technique to bleach maraschino cherries.

0:50 on the right bottom compound under alkaline conditions does the oxygen have 7 electrons then 6 valence electrons? That’s why it has a -? 👍❤️

your videos are very impressive. Thank you for sharing Even though im a material chemist, plant pigments chemistry is where my passion and hobby is. I had a lot of fun extracting it when i was a kid using various alcohols and acetone as I live in a tropical region (many bright colored plants)

No problem, there will be more videos to come! I love the colours from plant extracts, I am always impressed by the range of colours that are found in flowers, fruit and vegetables.
