if you mean the powder stuff he put on soy at the start, it's probably mold spores for the koji phase of the process. It's usually aspergillus sojae, aspregillus oryzae or both that's added(or they come naturally). They produce proteaze, which is important for yeast later on. Or it might be just yeast. One of these, anyway.
