Hi. I’ve made a big batch of croquettes - I have made them to the stage just before frying and have frozen them to use at a later date. But I have just realised that I have done only one layer of egg and breadcrumbs. I am worried they will burst when I fry them so can I remove from the freezer and while still frozen coat with another egg and breadcrumb layer and refreeze? I hope this makes sense. Thank you.
Yes the issue here is that they burst because of the steam released inside of them from the heat of the fryer. If the mix is too thin, you must reheat and thicken and chill again.

@@oliveoilspanishkitchen Our house is a great-room design where kitchen, dining room, and living room is one big area. So, not possible to close off the kitchen. ...and the cats are indoor-only pets, so they don't get eaten by the coyotes. I think I will need to build a ventilated box to place over the jamón on the kitchen counter to keep the cats from eating it when we are asleep. =O)

The first thing you want in the pot is the Chorizo, so it cooks first realising all those fat flavors and then leave last the most tender vegetable so it won't be all saggy, good luck
