He said “one clove” of garlic, but from the video he seems to have meant “one head” of garlic. Maybe I have an idiosyncratic understanding of these terms, but there you go
One thing I don't really get is that, you char the onion/shallots. What's the point of charring it if you wash em off??
Charring/roasting it brings out the aroma and flavor. You don’t want the burnt charred in there. It will make your broth dark and bitter taste. You’re washing away the impurities. The aromatics will still be there.

I can't believe you ate the parts we clean out and wash away 😮. That was hard to watch.
Unfortunately the difference in culture appreciate differently lol we enjoy the crab inners. Y’all just throw everything away. We actually use the inners in some of our cooking. Not just Vietnamese but most Asians.

You can get them in cans. People use them for clam chowder and it comes with the clam juice.

Just curious what kind of sugar you used…saw it was darker… I have palm, sugar, and sugar in the raw and granulated just wasn’t sure which one to use or if it mattered.
Regular granulate sugar. The sugar I used was organic cane sugar that I had on hand.
I would never eat in a plate like this - creepy ! The dishes in the Thai restaurant- cannot eat weird looking food .

Do you roll a few pieces of steak in one ? Does it fall apart while eating ? Or do you just one piece of steak per leaf? Thanks for sharing
Depends on how you slice up your steak. I sliced mine into thin pieces so when I roll them in the leaves, it’s a couple pieces at a time depending on how big the leaves are. It doesn’t fall apart because when you sear it to cook, the meat retract and stays its shape.

Started in Lockhart, TX decades ago, and he's expanded around the state. It's still the only place I order to be shipped to my home town, after 17 years of living in TX, and tasting some of the so-called "best" (for tourists).... Terry Black's is what the locals love. Hill Country BBQ isn't like other BBQ. It's post oak (not mesquite- blechh, or hickory- good for bacon) and time. No sauce needed (but available for tourists). :)

Ran across your video. How would you rate the hotel in general? I am planning on going to Cancun in May and trying to figure out which hotel to stay at.
I think the first glance entrance was spectacular. I haven’t been to other resorts in Cancun so I can’t compare. I put this at a 6.8/10 overall.
