Really nice! I made it exactly the way Chef Keller described (except the Kuzu starch)--it was so delicious. Now I am going to try it your way because I love the little potatoes that you used and the substitute for the cider. That was fun to watch--thanks for posting!

Hi Denny. Psyched you liked the HPE Virtual chef event last week. Those have been a ton of fun for us. I think about 700 people have been through those events with us by now. I also hope you put that great Montreal Spice blend through it's paces once your box finally arrived. This video was my walkthrough of Thomas Keller's Red Wine Braised Short ribs, and I can't take credit for the recipe. I got it by taking his Masterclasses at www.masterclass.com/classes/thomas-keller-teaches-cooking-techniques-meats-stocks-and-sauces/chapters/braising-red-wine-braised-short-ribs which I highly recommend. You can't go wrong learning from Chef Keller. You can also find the recipe in Chef Keller's book "Ad Hoc at Home". Whether you use Keller's recipe or another one, you can adapt his techniques you see here to make amazing braised short ribs.
